Instant Pot Vegan Bolognese

Step 1

Saute onion, carrot, celery, mushrooms & garlic in the Instant Pot with olive oil.

Step 2

Add tomato paste, Italian seasoning, crushed tomatoes, water & lentils. Stir to combine.

Step 3

Poke slits in spaghetti squash with a knife. Place on top of sauce ingredients.

Step 4

Cook on high until squash is tender & sauce is thickened. Release steam.

Step 5

Remove squash. Cut in half, scoop out seeds with a spoon & shred with fork. Serve with sauce.
