Step 1

Add dressing ingredients in a measuring cup or blender.

Step 2

Blend until smooth.

Step 3

Cook pasta of choice (I like whole wheat rigatoni). Dice vegetables.

Step 4

Combine veggies, mozzarella cheese & pasta in a large bowl. Add dressing.

Step 5

Toss to coat. Add chopped salami or Italian sausage if desired. Serve over a bed of arugula.
