Peanut Sauce Shrimp Stir Fry

FOR THE STIR FRY: • Shrimp • Veggies: onion, broccoli, bell pepper, mushrooms • Peanuts • Brown rice or brown rice noodles • Sesame or canola oil FOR THE SAUCE: • Soy sauce • Rice vinegar • Peanut butter • Honey • Fresh ginger

Step 1

Chop vegetables into bite-sized pieces & de-vein shrimp if needed.

Step 2

Cook brown rice or brown rice noodles according to package directions.

Step 3

Whisk peanut butter, soy sauce, rice vinegar, honey & ginger until smooth.

Step 4

Pan-fry shrimp over medium-high heat, stirring, until fully cooked. Remove & set aside.

Step 5

Cook veggies in skillet until softened. Add cooked shrimp & brown rice noodles. Pour in sauce & toss to coat.

Step 6

Sprinkle with peanuts & serve hot.
