Sriracha Shrimp Lettuce Wraps

Ingredients

• Shrimp • Veggies: zucchini, bell pepper, mushrooms • Green onions • Fresh ginger • Soy sauce (low sodium) • Lime (juiced) • Sesame Oil • Sriracha • Rice Vinegar • Honey • Bibb or butter lettuce • Cilantro (optional)

Step 1

Spiralize or chop zucchini. Thinly slice bell peppers & mushrooms. De-vein shrimp if needed.

Step 2

Saute green onions, ginger & vegetables until softened. Add shrimp.

Step 3

Add soy sauce & lime juice. Cook 3-4 minutes, until shrimp is fully cooked through.

Step 4

Stir together sriracha, soy sauce, rice vinegar, lime juice, honey & chopped green onions.

Step 5

Spoon shrimp and veggie mixture over lettuce leaves. Garnish & serve with dipping sauce.
