Teriyaki Chicken Stir Fry

Ingredients

FOR THE STIR FRY: • Chicken breast • Veggies: carrots, bell pepper, snap peas • Cashews • Brown rice or brown rice noodles FOR THE SAUCE: • Soy sauce • Rice vinegar • Orange juice • Honey • Cornstarch

Step 1

Par-cook carrots in microwave with a splash of water (or roast in oven).

Step 2

Cook brown rice or brown rice noodles according to package directions.

Step 3

Cube chicken. Pan-fry over medium-high heat, stirring, until fully cooked. Remove & set aside.

Step 4

Cook veggies in a skillet until softened. Add chicken again. Mix sauce ingredients in a bowl and toss to coat.

Step 5

Sprinkle with cashews & serve hot alongside brown rice or brown rice noodles.
