Homemade Zucchini Bread Ice Cream

Ingredients You'll Need:

• Oats • Unsweetened vanilla almond milk • Coconut milk • Zucchini (shredded) • Coconut sugar or white sugar • Vanilla extract • Mini chocolate chips • Walnuts (chopped)

Step 1

Cook oats, almond milk, zucchini, sugar & vanilla in a saucepan until thickened & oats are cooked.

Step 2

Remove from heat & stir in coconut milk.

Step 3

Pour mixture into a shallow dish. Allow to cool completely in the fridge.

Step 4

Transfer to freezer, stirring every so often, until firm (about 3 hours) OR churn in ice cream machine.

Step 5

Scoop & serve right away. Top with chocolate chips & chopped walnuts if desired.
