No Bake Vegan Lemon Bars

Step 1

Add dates, cashews, walnuts, oats & coconut oil in a food processor.

Step 2

Process until mostly smooth. Press into square pan. Chill in fridge to set.

Step 3

Soak cashews in hot water. Drain & add to blender with all other filling ingredients.

Step 4

Blend until smooth. Pour over chilled crust. Refrigerate overnight (or freeze 3 hours) to set.

Step 5

Once set, use parchment paper to remove from pan. Slice into bars.
