Healthy Mashed Cauliflower & Potatoes

• Potatoes • Cauliflower • Rosemary (fresh or dried) • White beans • Garlic powder • Salt & pepper

Step 1

Dice potatoes and cauliflower. Put into a large pot.

Step 2

Add rosemary. Boil until soft, then drain. Add white beans.

Step 3

Use an immersion blender or potato masher to mash the mixture.

Step 4

Once smooth, mix in garlic powder, more rosemary, and salt & pepper.

Step 5

Transfer to a large serving dish. Add a drizzle of olive oil if desired.
