3 Quick & Easy Healthy Breakfast Recipes

Good morning!

Remember when I wrote awhile ago about being in a total breakfast rut? Well, since then I’ve been making an effort to mix things up. Here are a few of my favorite healthy breakfast recipes as of late!

Cottage Cheese, Fruit, & Cereal Bowl

I’ve been on a big cottage cheese kick lately. Basically, just take your normal cereal + fruit combination, and add a serving of cottage cheese instead of milk! This morning, I topped my cottage cheese with a serving of Erewhon Raisin Bran Cereal, a scoop of chia seeds, some blueberries, and half a sliced banana (the other half was eaten on toast this morning pre-workout).

Cherry Banana Spinach Smoothie

Don’t knock putting spinach in smoothies til you’ve tried it. Sounds gross, but is so delicious — you won’t even taste it!

To make this smoothie, I’ve just been using my basic Banana & Spinach Smoothie recipe and adding a handful of frozen tart cherries. MAJOR yum. Cherries are great for you, too! Very good for fighting inflammation.

Serve with a side of toast with almond butter (and the second half of your banana, if you want) and you have the perfect balanced breakfast!

Quinoa and Fresh Berry Salad

I was introduced to this dish while I was out in Arizona with Thermador a couple weeks ago. So delicious! Super simple, too — just cooked quinoa (they used black, but white or red are fine, too) mixed with fresh berries! Add a little cinnamon and nutmeg in for some extra flavor. Tip: make the quinoa in big batches ahead of time so you can just grab and go in the morning.

Quinoa is a good source of protein and the berries provide all sorts of antioxidants, so it’s a great breakfast choice. Have it alone, or enjoy a side of it along with a piece of toast or a muffin, a glass of milk, or some eggs!

Time to get down to business — I have a very busy day today! At least I already got in a great workout — I hit up kickboxing this morning at United Tae Kwon Do in Carrboro. I started going a few weeks ago and I love it — I was really missing kickboxing ever since my LA Boxing partnership in DC ended (if you missed those posts — they are all on my strength and ab exercises page)!

    I love blueberries over my Greek yogurt sprinkled with flax see in the mornings. Your breakfast looks so good. I am going to have to try quinoa, it looks good in your pictures.

    I love quinoa! I make it big batches every Sunday for the week. I had a the High Protein Fruit and Almond Salad from Oh She Glows for breakfast this morning - it was really good and filling! I need to try the cottage cheese bowl! I have only ever ate cottage cheese on its own or in oatmeal.

    Always needing breakfast ideas. Yours are great. I recently had to switch up because I was eating too much pineapple for breakfast and it made my tongue sore. Good excuse for checking out other fruits.

        There's an enzyme in pineapple that is used to make meat tenderizer. I guess if you eat to much it does a number on the inside of your mouth. Imagine that.

    I wish I liked cottage cheese. But I always get disappointed because it looks like rice pudding to me (which I LOVE) and then it never tastes like it. Also, am I the only one who gets nauseous from smoothies? I used to love my spinach, banana, protein smoothy, but then they started making me crazy nauseous. Any clue why?

      Hmm... I don't know why that would be making you nauseous! Very strange. Maybe it's one of the ingredients - try having each of the ingredients on their own and see which one makes you feel weird?

    I love the idea of the cottage cheese, fruit, and cereal bowl! That is a nice change from using yogurt and probably packs more protein than just milk! :)

    I did the cottage cheese and fruit bowl this morning :) Instead of cereal though I had a side of sprouted wheat toast with peanut butter. YUM!

    Do you remember a comment about never having a snow cone before...? That was me just to refresh your memory. I have another confession...I've never actually had cottage cheese. It has always freaked me out for some reason. Shew! Glad I finally came clean on that one!

    All of these recipes sound amazing. I used to eat cottage cheese every single day and then I got hooked on Greek Yogurt. But every now and then I get a huge hankering for Cottage Cheese. It's always so good and such a nice change.

    I have to say that I love your blog. I have found a few fantastic recipes here and love these breakfast ideas. I love 'Green Monster" smoothies! Thanks for always sharing! I have a little quinoa left in the fridge, I think I will try berries & quinoa for breakfast tomorrow.

    Mmmm I would never have thought to use quinoa in a sweet dish, I'll have to try that. At the moment I'm eating a lot of overnight oats and carrot cake oatmeal! (recipes on my blog) :)

    Spinach smoothies are awesome. Great in the morning before a workout and then again post workout to get all your nutrients in. I am a quinoa fan but have not tried it for breakfast yet although I have been told by plenty of other vegetarians that it is awesome so I may just have to cave to the peer pressure.
