Leftovers Made Awesome: Chicken!

Okay so I know I said today I’d do a fitness post… but my lunch was too good not to share, so I’ll have to leave you in suspense 🙂

I had dinner at my grandmother’s last night, and she sent me home with some leftover chicken. So for lunch today, I stuck with my “______ salad sandwich” theme of the week and decided to make a healthier and more awesome American classic: the Chicken Salad Sandwich!

Autumn Chicken Salad Sandwich

Ingredients:

  • Leftover chicken, shredded or cut into small pieces
  • 1 celery stalk, chopped
  • 6-8 grapes, sliced
  • Small handful walnuts, chopped
  • Nonfat plain Greek or regular yogurt
  • Dijon mustard
  • Cracked pepper
  • Fresh spinach
  • Whole wheat pita

Instructions:

Start with the leftover chicken in a small bowl. Add chopped celery, grapes, and a small handful of walnuts.

You should now have this:

Next, add a spoonful of plain yogurt and a squirt of dijon mustard. As usual, add about 2 parts yogurt per 1 part mustard, to taste. Mix it all up, place on a whole wheat pita, cover with spinach, and enjoy!!

Mmmm so good! This would also be awesome with cranberries instead of grapes. And on hearty bread. Next time I randomly have chicken around, I’ll try that 🙂

I enjoyed my sandwich with one of my awesome Sweet Potato Banana Oat Muffins and my biology midterm flashcards.

I think it went well! There were only a few questions I was unsure of, so that was good 🙂

Speaking of Bio, we had a “go on your own” lab where we had to visit the Smithsonian Museum of Natural History and answer some questions about one of the exhibits. I went yesterday – it was fun to be downtown, and I took some pictures for you all 🙂

Hope you’re having a nice day! It’s cold and rainy today in D.C. I ran this morning with Ashley, and we even had to wear gloves! What happened to fall?!? It was so beautiful here yesterday! What’s the weather like where you are?

    It is pouring rain where I am, and has been steadily for the last 2 days! This wouldn't be so unusual if I didn't live in Los Angeles where it typically rains about one onemillionth of an inch per year. I am always embarrassed by how confused I become here when it rains in southern california. It's like I have never seen the stuff before and I am reverted to childhood and need someone to dress me. Let's just say that this morning I decided on trail shoes and a columbia ski jacket if that gives you any indication of lack of rain appropriate apparel I currently own.

    I will be home for christmas and most likely ny's too. I am currently coordinating my return with the end of fall classes but it looks like I will be in DC for at least 2 weeks, maybe 3 if I don't fly to london too. MUST TRAVEL SOON!

    Great minds think alike, I had a chicken salad mix for lunch too! Except mine was more like a summery salad I think... oh how I miss summer...

    This is one of my favorite salads; however, after watching a documentary on slaughterhouses I just can't get myself to eat chicken anymore or any kind of meat for that matter. Can you recommend an ingredient that I can use to substitute the chicken with? Thanks, Isabel
