Secret Ingredient Falafel

This recipe originated from the Blogger Secret Ingredient Contest. Each week a new blogger hosts and picks a special ingredient, which you have to use in a recipe in a creative way. This time the secret ingredient was pancake mix! It came out great, but if you don’t have pancake mix on hand, feel free to use whole wheat bread crumbs or whole wheat flour instead :)

  • 1/3 C whole grain pancake mix
  • 1 can garbanzo beans
  • 2 cloves garlic
  • 1/2 C fresh parsley (lightly packed)
  • 1 tsp baking powder
  • 1 tsp cumin
  • 1 tsp ground flaxseed
  • 1/2 tsp dried coriander
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • juice from 1 lemon

First, preheat oven to 400.  Then toss all the ingredients into a food processor and whirl it around until it’s pretty much evenly mixed.

Form the mixture into flattened balls (it should make about 5 or 6) and place on a cooking sheet. Pop in the oven for about 15 minutes.

Enjoy on top of salad or in a pita or wrap with cut up tomatoes and cucumber, hummus, and my Cucumber Yogurt Garlic Sauce!

These look great, Anne! Going to try them over the weekend – probably will get some tahini to make a sauce, and hummus, too!

BTW, made your veggie minestrone for my Dad at Easter, and he loved it! Used low sodium broth and tomato sauce (per doctor’s orders), and he was one happy camper!
