4 Ingredient Quinoa Salad

Get ready. This is going to blow your mind. 4 Ingredient Quinoa Salad – you officially have no more excuses for eating fast food for dinner. :)

Quinoa Salad

4 Ingredient Quinoa Salad

In a bowl, mix together:

  • Cooked quinoa
  • Salsa
  • Hummus (any flavor)
  • Chickpeas (canned – drained and rinsed)

And that’s it. Seriously! The proportions are up to you, but I used 1 cup of dry quinoa, cooked with water according to the package, 1 can of chickpeas, about 1 cup of salsa, and about 1/2 cup of hummus. I also added on some cracked pepper to taste.

Want to mix it up? Fun add-ins for this recipe are:

  • Avocado
  • Wilted or fresh arugula or baby spinach
  • Chopped peppers
  • A squirt of lemon juice
  • A few shakes of cumin (amps up the Mexican theme)

Told you it was easy. I know hummus and salsa sounds like a weird combination, but I promise it’s delicious.

    Anne, have you tried this with any other grains? I am vegan and LOVE quinoa, but recently realized that I’m allergic to it. I’m thinking I might try this with bulgur or farro. Thanks for the yummy inspiration!
