A New Packed Lunch & I’m in Runner’s World!

Hello and happy Friday!

I made a delish and super easy packed lunch earlier this week with the leftovers from my Kale & Chicken Quinoa Salad! I threw the leftovers in a tupperware:

I’ll share the recipe next week – they’re delicious and made with almond flour and coconut flour! I’m obviously not gluten free, but I just felt like experimenting with some fun different flours. I hadn’t baked in WAY too long.

In other completely unrelated news, I’m excited and very honored to share that my Twitter handle is featured in the December issue of one of my favorite magazines, Runner’s World! I’m dying to get my hands on a copy so I can see it in person, but friends have been sending photos and blogging about it so I borrowed a few pics from them. 🙂

And speaking of running… I just signed up for a Turkey Trot! I’ll be rocking out at the Alexandria, VA 5 Mile Turkey Trot – it’s an old favorite that I’ve done a couple times before in the past, but not for years. I’m excited to return to it and see how my pace has improved, and to work up an appetite for Thanksgiving, of course!

Are you running a turkey trot this year? Any other fun races on the docket? I’m also doing the Living Social Glow in the Dark 5k next weekend just for fun (they’re hooking me up with a press pass for the event), and I’m starting to look into late winter/early spring half marathons if you have any recommendations! I’m starting to feel the itch to train for something again… 🙂

    So cool! I'm doing a Thanksgiving Day 5k and once again will be donning my full body turkey costume. This year though, my mom will be dressing as a pilgrim and chasing me! HA~!

    Congrats, Anne! I'll be doing the rock n roll half in DC, I believe it's in March. Then the Nike women's half in DC is in April but bummer that registration is a lottery for Nike.

    Well done on getting a mention, you must be thrilled! Great way to put you in good spirits for the weekend! We don't have thanksgiving in Ireland but I'll definitely sign up for a Christmas run this year! :) The muffins look very cute!

    I'm doing a turkey day 5k and going to just try to keep up with my dad. He just got into running this year and I can't let him beat me (ha). I'm looking into the B&A trail half marathon in March. I hear the trail isn't really a technical trail, more like a paved trail, and it is a relatively flat course.

    yessss!!! I love Runner's World, congrats! I'm running the San Francisco Turkey Trot on Thanksgiving, then I will binge eat stuffing and turkey. I'm really psyched for the "Awesomely 80's" San Francisco race in a few weeks... ALL 80'S NEON! Theme races are the best :-)

      RD exam prep is on hold until January since I can't take it until late January/early Feb! For now, finish internships, write and present masters paper, and graduate. YAY!

    I'm doing the LivingSocial Glow in the Dark 5K this Friday too, so maybe I'll see you there :) Your post actually inspired me to look up Turkey Trots given that I'm actually going to be in town for Thanksgiving this year, and I think my boyfriend and I are going to do the SOME Thanksgiving Day Trot for Hunger in DC. We're looking at the 8K Jingle Bell Run in December too. My boyfriend signed up for the Rock N' Roll Half in March, but I'm still unsure if I want to commit to a half!

      Awesome - please say hi if you see us! :) That's so awesome you signed up for a Turkey Trot! I love Jingle Bell runs, too - I've done the DC 10k one before and it's great. I'm thinking about doing the Rock n Roll DC half as well - I did it 2 years ago before it was RnR (same course, though) and loved it!

    I'm doing my first Turkey Trot (5k) in Johnson City, TN this year - figured it was a good way to get my exercise in before the eating starts! haha I just started running back in April/May, so 5k is the most I've tackled so far. haha A friend and I are debating whether to register for and start training to run in Knoxville's Covenant Health 1/2 Marathon (they also offer a full marathon option as well as a 5k) next April - but I'm hesitant to commit to such a long race - it's kinda scary!

    Runner's World - that's so great! Congratulations! I like to work out in the mornings, but don't usually eat anything. Do you have any suggestions for what I should eat before I go running?

      It depends how long you're running for! If I'm doing a "shorter" run (e.g. 3 to 5 miles) and going really early in the morning, I'll just have half a banana or a handful of cereal as I head out the door. For days when I'm doing longer runs, I'll have toast with peanut or almond butter and a sliced banana on top.
