{All That’s Missing is the} Tropical Island Smoothie

Given that it’s March, my Vitamix blender hasn’t gotten a whole lot of love lately. It’s been sitting, sad and unused, in one of our cabinets since about November when the weather turned cold. Until yesterday, that is, when the DC area got another beautiful taste of spring.

Tropical Smoothie

The sun was out and shining, I had the sliding door to our porch open all day long, and the blender came back out to play. I took an afternoon break from work to walk over to the grocery store; by the time I arrived home lugging the heavy bags, I was actually almost sweaty! I took one look at the strawberries in the grocery bag and I was sold. It was smoothie time.


As a side note, how freaking adorable (and slightly impractical, but whatever) is this Anthropologie measuring cup? We got a set of them as a wedding gift and I’m obsessed.


Given that the weather was so nice, I decided to whip up as fruity and fun a creation as possible. I’ve still been loving this Almond Breeze Almond Coconut Milk, so that went into the mix as well. To round it out and add a little protein and thickness, I also threw in a single serving blueberry Greek yogurt.


Et voila! It was perfect. Creamy, fruity, and with just a hint of coconut. If I closed my eyes, I could almost pretend we were still on our honeymoon. :) All that was missing was the beach… and maybe some rum.

(1 smoothie)

  • 3/4 cup Almond Breeze Almond Coconut Milk
  • 1 cup fresh strawberries
  • 1 single serving (5.3 oz) blueberry Greek yogurt (I used Stonyfield brand)
  • 1 cup ice


  1. Throw it all into a blender, whirl away, and enjoy!

    Great minds think alike! I made something similar for my first Almond Breeze recipe, too! Mine was using the almond-coconut blend and used strawberries, pineapple, and banana… I think we both deserve a beach vacation!

    Yeah, I find really hard to make smoothies and juices with the weather like this. I can’t wait for warmer days filled with fruits n veggies. All I want lately is hot hot coffee and soups, but I may have crossed my limit lol This recipe was added to the list! thanks

    Yum coconut! I actually have a smoothie almost every day, even in the winter. I have two that I rotate between (because I’m boring like that). The first one is just peanut butter (or PB2), chocolate protein powder, oats and a banana. The other is vanilla protein powder, frozen orange juice concentrate, oats, banana, and then a cup of whatever combination of frozen fruit we have (usually strawberries, blueberries and raspberries).

        If you’ve ever had a no bake cookie – that’s what it tastes like! I actually make that one a lot because 1) it’s cheaper because it doesn’t use any frozen fruit and more so 2) it actually freezes really well, so I make it the night before and then take it out and drink it when I get to work. It thaws slowly, which prevents me from just guzzling the whole thing down in 30.5 seconds, which is what usually happens with my other smoothies.

    I love strawberrie and bananas, or anything with coconut, yum. I also love any kind of berry especially blueberries! I wish I could have my windows open but its 40 degrees out, bummer on the first day of spring!

    I am a sucker for any cute cooking dishes/linens! I have some impractical measuring cups too but I actually think they are great to use for snacking for 2 reasons. 1. It’s a fool proof way to know your portion size & 2. Eating out of nice dishes make food more enjoyable (at least for me)!

    I just made carrot, apple, cucumber, strawberry, and lime for lunch :) Can’t wait to get a vitamix, but my juicer is in the mail coming to my doorstep this week yay!

    What I love about these smoothie recipes is they are simple…get the ingredients, throw in the blender and enjoy. Unfortunately the difficult part is cleaning up the blender when done. :)
