Bethany Beach Highlights

Morning, friends!

I’m back in DC after a wonderful couple days in Bethany Beach, Delaware with my friend Hilary! I’m hitting the ground running today (literally — got in a quick 3 miler this morning!) to catch up after taking a couple days off — on the docket are various conference calls, doing some grad school paperwork for starting up my next internship next week, two wedding planning related appointments, a hair cut, attempting to catch up on emails, meeting Matt for lunch and some girlfriends for dinner. Whew! Plus, packing — I leave tomorrow morning for the Healthy Living Summit!

In the meantime, I’d like to share some highlights from earlier this week in Bethany. 🙂 Enjoy!

The #1 highlight (besides getting to spend some quality time with my high school buddy Hilary) was of course the beach. 🙂

We spent all of Tuesday and most of Wednesday with this view.

It was especially awesome because the weather forecast called for rain/thunderstorms both days. We lucked out!

I brought my Nook along and spent the majority of the beach time reading “Wild” by Cheryl Strayed. Have any of you guys read it? It’s REALLY good so far — I’m about 3/4 of the way through. It’s a memoir about hiking 1100 miles of the Pacific Coast Trail solo. Pretty amazing!

Highlight #2 — raw oysters! I’m obsessed with them lately.

They are especially delicious when wine is involved, too. And did you know oysters are a great source of zinc, calcium, iron, selenium, manganese, vitamin A and vitamin B12, among other things? Thanks, Biochem.

Highlight #3 — the boardwalk! I LOVE boardwalks. They just scream summer and happiness.

Highlight #4 — beach hot dogs. Topped with chili. Oh yes I did.

And while we’re at it — Dippin’ Dots. Yes, future Registered Dietitians (at least this one) still eat hot dogs and Dippin’ Dots on occasion. Moderation, friends!

    looks like such a fun time!!! and dippin dots are the best! my favorite thing about the beach is swimming in the ocean (if the water's warm enough) or just laying on my towel reading a good book.

    Beautiful. I especially love the raw oysters for the "amoung other things" they are good for. Teehee Beautiful sand. Kind of reminds me of Panama City Beach. Your a busy woman.

    Definitely the reading! I so rarely have big stretches of time to read that the first thing I do when I hit the beach is dive into a good book :)

    I'll have to get myself a copy of Wild it sounds like an inspiring read. Plus it will make my hikes seem tame and give me the motivation to go further, or so I'm hoping :)

    I could never get into the Dippin' Dots craze. They just lack the creaminess that ice cream should have. One thing I would LOVE to try, though, is SHAVED ice cream :) It's totally trending in SoCal. In China... I found ONE shop that had it but passed it up in favor of gelato :)
