Blogger Meet Up and Stir Fry Saves the Day

Hello friends!

Yesterday for brunch I headed over to one of my local favorites — Guglehupf Bakery and Cafe! The occasion? A blogger meet-up!

Diana (in the middle) was in town for Thanksgiving and had plans to meet Sarah (right) for brunch — when Diana saw via Twitter that I would be back in town on Saturday night, she asked if I’d like to join, too!

I’m sure glad I did! I love Guglehupf and I’ve only been there once before, with my friend Kristi back in August. Yum yum.

I was feeling more lunch than breakfast, so I ordered the beet sandwich. I heart beets.

The sandwich included beets, a blue cheese spread, walnuts, and arugula. YUM!

I spent the rest of the day catching up on school work, watching 16 and Pregnant, hitting the grocery store, unpacking, doing laundry, and all that fun stuff. I only have 2 more weeks of school left until Christmas break (!) and it’s going to be VERY busy until then!

For dinner, I was craving something with lots of veggies 🙂

I started by sautéing some bok choy and red peppers in some minced garlic and a drizzle of sesame oil.

Once the bok choy and pepper were mostly cooked, I added in some leftover cooked string beans and this tofu that I picked up from Trader Joe’s:

Then, I added in some ketchup, soy sauce, and ginger powder, to create a sort of sauce.

Veeeery tasty! Served atop a pile of brown rice.

I have two servings leftover in the fridge so it’ll be nice to have some healthy meals to quickly reheat during this busy week!

Time to get back to school work! I went for a 4 mile run this morning with a friend (it’s a good thing I wasn’t alone, since it was one of those “My legs feel like lead. I hate running. I want to walk the whole way.” sort of runs.) and now I’m going to get some work done before heading off to school. I’m meeting the girls to go over our Biostats homework and then we have our very last (sniff) Food Science lab. Sadface. Tonight we are making candy! I’ll be sure to take photos 🙂 I have another school meeting after lab, too, regarding a group presentation we’re giving tomorrow — it’s going to be a long day! Ta-ta for now, friends 🙂

    A beet sandwich sounds amazing - I absolutely love beets just wish they weren't such a pain to cook. Good luck with the rest of your semester - I am running out of steam fast but just keep telling myself...two more weeks!

    The beet sandwich looks amazing! And good luck with all of your finals! I know exactly how you're feeling right now. I've got 5 papers due this week, plus a multitude of other odds and ends and then of course exams next week! Yikes!

    Ah...we also have our last foods lab on Wednesday! I'm sad but I won't miss having an evening lab. Yay for crystallization and beverage lab! AKA candy and ice cream lab!

    I LOVE that tofu from Trader Joe's!! I've made so many stir frys with it :) I'm looking forward to trying your quick and easy sauce - I've never thought to put ketchup in my stir fry sauces!

    Anne -This stir fry was great inspiration. Last night, I made it with bokchoy, mushrooms, red peppers, and scallions and Tempeh. So delish!

    Anne, received my two T-Shirts and I love them. Even though I dropped 2 more pounds, by the way, since July , have lost 34 pounds, they fit snug at the bustline, but they do fit. I ordered XXL, I am 5'6 and 128. I am used to wearing my clothes very loose, because before I lost weight, I was self-conscience. My husband says they fit great. and they do. He likes it because they are snug at the bust line ( you might know, he would like that). But they do look really good on me. I just have to get used to the fact that I no longer have to hide myself. I am really glad I purchased them. Thanks
