Colorful Meals

The weather was gorgeous here over the weekend so we spent a lot of time outside, including meals!

One of the best meals of the weekend was a grilled feast last night featuring sausages, grilled cauliflower (obsessed), and salad. So colorful and yummy.

Another great outdoor meal was brunch yesterday!

bacon, cider donut, and a veggie and sausage frittata

Matt and I took Riese for a morning stroller run…

And then came home and made a frittata with sausage, zucchini, onion, broccoli, and grated parmesan. We cooked it all on the stovetop vs. the oven and it came out well!

Riese was entertained by peeling the onion. 😉

As for other meals, we did delivery/takeout two nights – the pictured Lebanese one night + pizza another night.

lebanese taverna tabouleh, hummus, salmon, chicken, pita

Breakfasts and lunches were our usual favorites + some leftovers and odds and ends.

Afternoon snacks were overnight oats (because I totally forgot about the oats in the morning, whoops) – here are my fave easy overnight oatmeal recipes if you want in on the deliciousness. 🙂

Since it was so nice out, I spent Riese’s nap time outside both days – yesterday I spent some time on the front porch working, and on Saturday I spent a couple hours in our backyard hammock reading the newspaper and a new book.

I just started reading the book Raising White Kids (affiliate link) and highly recommend it – incredibly helpful whether you are a parent or a grandparent/teacher/someone who interacts with white kids a lot. It gives concrete examples for how to properly engage with kids on the subject of racial injustice, including why the colorblind approach, while well-intentioned in theory, is not recommended.

I hope you guys have a nice start to your week. I’ll see you back here on Wednesday with a blog post all about intuitive eating for runners!
