Just Add Lemon

We had more salmon on the menu this week – this time in the form of my Easiest Baked Salmon recipe!

It was actually a Sun Basket meal, but instead of searing the salmon like they suggested I wanted to use my favorite baked lemon salmon method, and while I was at it I filmed a little recipe video for it!

Another delicious dinner this week was last night’s seared chicken, sauteed veggies, and pasta.

The veggies were simply sauteed in a little oil with salt and pepper:

And as for the pasta, once it was cooked we topped it with some olive oil, a ton of lemon juice, Italian seasoning + garlic powder, and some freshly grated parmesan cheese. Such a good combo!

We also had a pretty epic homemade nachos night earlier this week – we were going to make tacos, but then we realized we forgot to get shells – whoops! Good thing we had lots of chips on hand. 😉

We topped the chips with some ground beef (cooked in Mexican spices), black beans, cheese, and cilantro, and put it in the oven for a few minutes until the cheese melted. So good! Plus some unpictured guac and bell peppers, too.

Unsurprisingly, Riese was really into this dinner. 😉

As for lunches this week, we did a lot of leftovers and fridge odds and end, plus some sandwiches.

One day I had a random bagel sandwich with cream cheese, dill, and turkey (smoked salmon would have been better but we didn’t have any). It was a yummy combo!

We had grain salad bowls one day, too.

They had arugula + spinach, rice and quinoa, feta cheese, carrots and cucumber, chickpeas, pumpkin seeds, and homemade balsamic vinaigrette.

As for fitness this week, I did some morning walks/runs while chatting on the phone, and we had our usual Tues/Thurs morning virtual boot camp class too. My days are always more positive when they start with some movement, so I try to remember that as we plan out our weeks!

    Mmm love lemon, garlic and parm on pasta but I always forget about it. Thanks for the reminder as I have lemon wedges in my freezer. This week I had the strangest craving - Thanksgiving wrap. Sauteed turkey breast cutlets, stuffing and cranberry sauce in a whole wheat wrap. Next week is shakshuka...yum yum.
