Food + Coffee Love

Hi guys!

I’m so glad many of you liked the look of my Healthy Tuna Noodle Casserole recipe! We’ve been enjoying the leftovers – I had the last of it the other day for lunch while at the UberOffices. I tossed it in a tupperware on top of some greens, and added some canned chickpeas to the mix, to, for a little more volume. Delish!

I also had an unpictured orange to end my meal on a sweet/juicy note. 🙂 Speaking of juice, btw – how cool is this vending machine that got installed recently at the UberOffices?!

So far I’ve tried the green juice and the beet juice – both delish. Love that it’s a local company, too – I hadn’t heard of Tasty6 before!

On the breakfast front this week, I’ve been making a variation of my Flour Free Breakfast Pancake! Kylie recently wrote about making it with coconut flour in place of the ground flaxseed, so I thought it would be fun to mix it up and do the same. I had an early morning client meeting today at 7:45, so I had a snack (toast + PB) before heading out the door. When I got back home afterwards, I set to making myself the pancake!

The coconut flour is delish in it – it makes it taste a little more like a “normal” pancake, I think, than the flaxseed, although you can definitely taste the coconut. I liked it, though – I think I’ll mix it up regularly! Variety is the spice of life, right? 🙂

As you guys know, we got a Nespresso machine for our wedding that I’m completely obsessed with, and use pretty much every day to make lattes. As of late, I’ve been trying out some new espresso, though – the team at Gourmesso recently sent me some of their espresso capsules to try out for a sponsored review. I’ve been really enjoying them!

Gourmesso is a New York City-based coffee company that makes coffee capsules that are compatible with Nespresso machines. The big benefit? They sell at a price that is 30% less than the original Nespresso capsules. The capsules are sold online and ship to all 50 states. They look very similar to the Nespresso capsules, which makes sense since they have to fit the same machine. 🙂

Gourmesso currently offers 20 different espresso varieties made with coffee beans from around the world, from South and Central America, to Africa, India and Asia. These blends include 10 different espresso blends, three lungo (long-pour) blends, six flavored blends, and one decaf option. They also offer the only certified Fairtrade coffee capsules available. Right now only a few of their offerings are Fairtrade, but they are working to switch all of their capsules by this spring!

On the workout front this week, I don’t have anything to report – I’ve been feeling pretty wiped so I took Sunday, Monday, and Tuesday as rest days. As for today, I just treated myself to a restorative/low key lunchtime yoga class. Felt good to stretch, as always!

I’m off on a trip tomorrow morning – back to work and then I need to pack! Have a great day, everyone!

    I had no idea about Gourmesso! We have a Nespresso machine, but find that the espresso is pretty watery. We use it when making lattes and things, but that doesn't happen very often. My husband and I both like to drink espresso straight (switched to decaf though recently), so if the quality isn't very good then it means a Nespresso machine sitting on our counter and not being used. I may check into the other company. How do you feel the quality of the two compares?

      I found the quality to be very comparable. Gourmesso was maybe slightly less bold/intense in flavor, though. That's interesting you find the Nespresso espresso to be watery - I haven't found that at all!

    It is so nice to hear that you took 3 rest days! I constantly give myself the guilt trip when that happens... I have been reading your blog for a few months now and it is very inspiring! When I am feeling lazy, and read about your long runs, I push myself to get out of my house! Thank you for that!

    I always make the pancake with either all almond meal or 1/2 almond meal and 1/2 ground flaxseed (and always with blueberries - usually the Trader Joe's wild boreal frozen blueberries). It is a great breakfast, and I'm so glad that I found your recipe here.

    I've never cooked with coconut flour before. If I blended some dried coconut flakes, would it be basically the same thing?

    I'm just discovering coconut flour & loving it. Did you use the exact same amounts as for your flaxseed one, but just swap the coconut flour for the flax? Kylie's recipe serves 4 & I only want to make a single. Thanks!

    Love all of the great advice for a healthy lifestyle I'm finding here. One thought to share - I love coffee, but unfortunately the acidity gives me heartburn. I've been drinking an alternative - teeccino (http://teeccino.com/)- naturally decaf, low acid, and totally delicious! Anne, have you tried this herbal coffee?
