Healthy On the Go Snack: Peanut Cinnamon Date Balls

With two tests this week, convenience is the name of the game! Enter these delicious, nutritious, and super quick and easy Peanut Cinnamon Date Balls.


Just like a Larabar, but cheaper :)


I was craving some sort of nut/fruit bar the other day but didn’t have any, so I decided to bust out my new food processor and make some of my own!


Thank goodness I don’t have to cover my ears anymore. At least not as much ;)



Peanut Cinnamon Date Balls (vegan)

makes 6 balls (3 servings)


  • 3/4 C pitted dried dates
  • 1/2 C peanuts
  • 1 Tbsp. oats
  • 1/4 tsp. cinnamon
  • 1 tsp. water (to help them stick)

Just toss it all into a food processor until ground/mixed, then form it into balls. Super easy!


Nutritious, delicious, portable, and ready in mere minutes. Now that’s my kind of snack.

I’m off to take both of my tests, gah! I spent the morning on the elliptical studying again so I think I should be good to go.

I’ll be back with a fun post tomorrow about my afternoon today! After our tests, my Food Service Management group will be sticking around the kitchen at the UNC hospitals to make our Mexican Black Bean Burgers. I think some of their staff will be taste testing them with the possibility of actually selling them at their retail stores — cool!     Good luck on your test. I absolutely love your business cards. I am anxious to know how many carbs are in those wonderful looking Peanut Cinnamon Date balls. Being a diabetic, I have to count carbs. I know that stuffed dates are high in carbs, but these could be ok for me for a mid morning or afternoon snack by themselves. They look great.

    I love making homemade larabars. I have done a few flavors, love it with cocoa too! They are great to grab from the freezer. Business cards are awesome.

    Ditto on the awesomeness! I was thinking of making something like this for Valentine’s day! Like a healthier truffle…maybe dipped in some dark chocolate and rolled in the shredded coconut! Yum! Thanks for sharing!

    I have the same blender/food processor combo! However, mine has always been WAAAAY loud and I need to cover my ears when I use it. I need to contact Cuisinart…

    I have made my own larabars too, but used cashews instead and never thought of adding cinnamon- thanks for the idea!

    Thanks so much for posting this recipe! For months I’ve been toying with the idea of making my own Larabars. Because the ingredients are so simple, I knew it would be super easy. Thing is… I’m just kind of….. lazy. Now that you’ve made them, I’ll need to do it, too! Maybe add some dried cherries, cranberries or chocolate chios, if I’m feeling nasty.
