I feel so lucky to have such a wonderful group of friends here 🙂

015

Love these girls. (We missed you, Elder!)

016

Last night, my classmate Elle (the blonde in the white shirt) had us over to her adorable place for a homemade whole wheat pizza night!

Matt came, too 🙂 He was a good sport about hanging with the girls all night!

020

(Sidenote — aren’t Elle’s curtains fabulous?! She made them herself!)

Elle has a pizza stone, so we cooked the pizzas one at a time 🙂 It was perfect so we had time to digest in between!

001

003

We had some awesome combinations, all on top of Trader Joe’s whole wheat pizza dough.

First up — Elle’s creation, a roasted garlic, pear (!), prosciutto, and mozzarella cheese pizza 🙂

011

022

YUM! The pear was such a fun addition.

Next up — me and Jillian’s special top secret pizza, using our purchase from the farmers market — smoked mozzarella cheese!

031

This cheese was SO good. We sampled it at the market and it tastes like smoked meat or something! Yum.

Using the cheese as inspiration, we made a BBQ Chicken pizza!

023

It was just as good as we hoped it would be 🙂

028

Next up — a veggie pizza with tomato sauce, roasted squash and orange pepper, fresh mozzarella, and Italian seasoning. Beautiful!

029

032

033

Check out the steam!

034

By this point, Matt decided to step in 😉 Enter — the MAN PIZZA!!!!

042

He had fun creating it, haha. Man pizza basically = lots of meat!

036

On the left — tomato sauce, cheese, and a ton of prosciutto. Mmmmm.

039

On the right — pesto, fresh tomatoes, fresh mozzarella.

037

Both sides were AMAZING!

040

041

We also had a beautiful salad to enjoy with our pizza 🙂

013

Dessert was this insane chocolate tart that Elle made earlier on in the week using a recipe from Real Simple.

044

It was like fudge — very rich! A tiny bite was just perfect 🙂

043

Matt and I just went for an awesome hike and now we’re heading off to his brother and wife’s place for dinner! They live in Raleigh and it’s insane we hadn’t met up with them until this weekend. We’ve all been so busy! Actually, the last time we saw them was at their wedding in June!

Enjoy the rest of your weekend and stay tuned for some amazing hiking pictures tomorrow 🙂

Man pizza looks mighty good. I made a pizza (personal size just for me) with banana pepper and pineapple slices on it and it was so good. Elle's window treatments are very original and pretty.

I love pizza night! We always put pear or apple on our pizza, it gives it that little bit of sweetness without being super-sweet like pineapple. Yum!

I used the same TJ dough last night on regular pizza pans - utter disaster!!! The toppings burned while the dough remained uncooked in the center. I had to throw 2 whole pizzas in the trash.
