Lazy, Rainy Weekend

Hello from the dreary south!

It sounds like most of you have snow right now; we just have cloudy skies and lots of rain here in North Carolina. It’s actually made for a very nice, cozy weekend so far. Besides venturing out on Friday night for sushi and twice to go to the gym, Matt and I have pretty much just been rocking out at home in pajamas and working our way through the TV show “Breaking Bad” on Netflix. Awesome.

All the homemade soup I made this week came in handy for lunches!

I had some of the leftover Chunky Turkey and Vegetable Soup:

Which tastes way better than it looks in that photo, I promise.

And Matt had some of the leftover Homemade Minestrone Soup:

Plus salads on the side for both topped with tomato, green pepper, and olives.

Delish! We also used these fun water glasses that my brother got us for Christmas. They are handmade in Italy!

The tops are uneven — so cool looking.

Last night we decided to make homemade pizza!

I love homemade pizza — so fun to create the perfect pie. Plus you can add lots of veggies! We bought a whole wheat crust at the store and topped it with sauce, cheese, sweet peppers, mushrooms, fresh basil, and pepperoni.

I must say, it was a pretty awesome combination. We also added some cracked pepper and Italian herbs on there as well!

Then we popped it in the oven (right on the rack, per the instructions)…

And a mere 15-ish minutes later, we had restaurant-quality pizza, ready to go. We made sure the crust got nice and crispy. 🙂

The below photo is entitled “Why we need a pizza slicer.” Apparently delicious crust = very hard to cut with a normal knife. (Definitely putting a slicer on our wedding registry, along with one of those huge pizza spatula type things… whatever they are called.)

I’m off to get in a workout before meeting up with my friend Hilary for lunch. I need to get some school work done at some point, too, alas.

    I love breaking bad! BF and I got on a huge kick this fall and watched all of them in a few weeks (it was a little sad). Now we are waiting intently for the new season to start up.

      We just finished the first season - still going strong! When is the new season back? I bet we will finish what Netflix has before then, ha.

        Sadly not until summer. And they said it will be the last season. But luckily you have a while to go! It is season 5 that is starting up this summer.

            Also if you haven't watched Sons of Anarchy yet, that would be a great one after Breaking Bad. It's also on netflix. Those were the two shows BF and I were obsessed with this fall.

    I love working my way through seasons on Netflix, so much so that when I watch shows currently airing on Hulu I get so annoyed I have to wait a whole week for the next episode!!

    Homemade pizza is the best! And I love our big pizza cutting board (that's what I call it???). Makes it super easy to get the pizza outta the oven or off the pan. Have a great one!

    Homemade pizza sounds good. My husband used to laugh at me because we had pizza scissors when I was growing up. Obviously cut it perfectly but I didn't realize it was wierd!

    Yum! I love homemade pizza and yours looks delicious! Netflix is the best (except for when you want to be productive of course :P), my boyfriend and I are currently working through Friday Night Lights and we're obsessed!

    Pizza looks great. Nothing like homemade pizza. Lazy stormy day and night in Atlanta area yesterday also. Spent 1 hour in our safe room until tornado threat lifted.I love lazy rainy days filled with beauftiful food. Oh yah

    It's all dreary in NW Louisiana, too...lame. I'm pretty sure you've just convinced me to make a pizza later today. Also, I agree that kitchen shears make a great alternative to a pizza cutter.

    Oh my God, we're obsessed with Breaking Bad over here. We watched 3 episodes yesterday and I literally didn't change out of my pajamas all day. Amazing.

    A "peel" -- the "huge pizza spatula type thing" is called a pizza peel. But what you really need to get is a pizza stone, a smooth flat stone (or somtimes made out of ceramic) that you put on the pizza rack to bake your pizzas on. If you get a peel, a stone, and a good pizza crust recipe you're set for life.

        You can actually skip the peel if you want to--it's a bit of a trick to get a whole loaded raw pizza off it and onto the stone. I just roll out and top my pizza dough on parchment, slide the parchment onto a baking sheet, then slide it onto the pizza stone. Works great!

          Cool! We'll have to experiment to figure out the best approach... straight onto the tray in the oven worked well actually, minus trying not to burn ourselves, ha.

          Corn meal is my trick. Liberally dust the peel with coarse ground corn meal and the pizza dough should easily slip off onto the stone with a shake or two. Plus, I like the texture the corn meal adds to the crust. Bonus: you'll almost always have extra corn meal around should the sudden need to make polenta arise. Four out of five chefs concur that lack of appropriate treatment for Sudden Polenta Syndrome is a leading cause of CCI (Chronic Culinary Impairment).

    My SNL and I made a homemade pizza last night! It turned out so good! We had all the fixings on there too, things that I normally would not have put in my mouth years ago. I was just a cheese pizza girl. ;) Love the cups!

    Here in Australia it's supposed be summer but alas... it is windy and rainy! I had a pizza for lunch today on a wholegrain wrap! So quick, easy and yummy :)
