Leftover + Leftover = New Awesome Meal

Mmm… all this talk of leftovers in the 5-minute lunch post comments yesterday got me brainstorming!

I defrosted the remainder of my BBQ Chickpeas with Sweet Potatoes & Bok Choy for dinner last night. I decided to mix it with the rest of my brown rice leftover from lunch yesterday — and voila!

Delish! The grains soaked up the BBQ sauce really nicely 🙂 (I tossed some random leftover red quinoa in there too for good measure)

I also made a batch of my Cinnamon Raisin Almond Balls. You know… so I could take pictures of it. 😉

In other news, I’m getting my hair cut this afternoon! I know you ladies know what I’m talking about — how your hair is fine for months, and then all of a sudden it’s out of control and you can’t stand it and it’s in a ponytail all the time? Yeah, that’s where I am right now. Can’t WAIT to get it fixed up!

    Hmmm a leftover + leftover lunch is sort of like how two mixed breed dogs make a mutt...and everyone knows mutts are amazing!!

    I love trying to use leftovers in different ways to keep it interesting. And I totally know what you're saying about your hair - - My hairdresser told me to come back "when it starts looking weird" for a new cut. ha!

    I need to start making more food than I need for a meal! I always just make one nice portion every time. But I'm missing out on such easy next day lunches. I always just think that I'll eat everything that I make when I make it, but hopefully I'm over those overeating tenancies of long ago. I'll have to try it and see if I can handle it!

      You can do it! :) Leftovers are SO awesome and helpful, especially if you get creative with them so you aren't eating the same thing over and over. Try packing up the second portion (or however much you have left) before you eat, after plating your meal, that way you won't have it all in front of you at once!

    Those cinnamon balls look delicious. I love anything with cinnamon...Can you make them in a mini food processor? That's all I have at the moment!

      Sure, that would work! My food processor isn't that big... just use a smaller amount I guess? And hold on tight - the almonds will make the thing jump off the counter!

    Oh i hear ya! i'm in the Omg-I needed a haircut um, YESTERDAY-phase.....go enjoy that new 'do :) p.s. I'll bring you Vino if you bring me an almond/raisin/deliciousness ball tomorrow...? heh

      Haha wellllllllllll that would work if I hadn't already destroyed all of them ;) To my defense, it only made about two portions, one of which I had last night, and one today. Heh. I'm sorry!! And I'm all out of raisins and almonds now. BUT next time I make them... I will save some for you pho sho :)
