Okay, fine. Apparently I do like Spaghetti Squash.

Tonight was one of those nights where I was feeling super lazy and didn’t want to cook. I played tennis again this afternoon (it was soooo gorgeous out… had to take advantage!!) with my friend, so by the time I got home and showered, it was time to eat.

I stared at the open fridge for awhile, finally deciding to give the rest of my spaghetti squash from the other night a try! This time, it was a win. Simple, easy, and tasty. I’ve decided the key is to have it as a side dish, not as a main course subbing for pasta.

I topped it with a drizzle of olive oil, a little cracked pepper, and some grated parmesan cheese. Deeeeeeeeeelish!

Nom, nom, nom. (this makes me giggle)

With it, I had a salad with sliced beets (SO OBSESSED!!!!) and cucumber topped with balsamic vinaigrette…

…and some gouda (mmm love) with these tasty crackers my mom and I picked up at Whole Foods while she was visiting.

They are SUPER crunchy and that makes me happy, plus it’s perfect for annoying anyone else near you while you’re eating them. 😉 Great ingredients list, too!

Aren’t totally random dinners the best? Sometimes they’re just necessary 🙂

Alrighty, I’m off to work on my UNC application — gah! It’s due December 1st. I’ve got everything done… except for the dreaded personal statement. Why are these darn things so freaking hard to write?!?!
