Blueberry Apple Cinnamon Yogurt Bread

I’m glad you guys enjoyed the photos from the beautiful weekend here in D.C.! They were actually all taken with my little point and shoot — check out this post for my tips for taking better point and shoot photos.

This week is going to be insane getting ready for the big move — I spent all day yesterday with my mom running errands and sorting through my clothes. I literally got rid of nearly half of them! The damage:

  • 5 huge trash bags (for Goodwill)
  • 1 huge trash bag (for the trash)
  • 4 huge shopping bags (to sell)

Sweet! I always feel so productive cleaning out my room and getting rid of stuff I don’t need. On the docket today is getting my car serviced, getting a Tb vaccine shot, sorting through old papers, and starting to PACK!

But for now — a new recipe!

Blueberry Apple Cinnamon Yogurt Bread

Ingredients:

Dry:

  • 2 C spelt flour
  • 1/2 C brown sugar
  • 1/2 C finely ground flaxseed
  • 1 Tbsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Wet:

  • 1 C unsweetened applesauce
  • 1 C whole milk
  • 1/2 C plain yogurt
  • 2/3 C blueberries
  • 1 tsp. vanilla extract

Instructions:

Preheat oven to 325.

1) In two separate bowls, mix dry, then wet, then add wet to dry, stirring gently until evenly mixed.

2) Pour the batter into a 9×5 pan. Top with pumpkin seeds (optional — makes it look pretty!).

3) Pop it in the oven for 55 mins to 1 hour. Fork check to make sure it’s done!

    This looks great! I've been on a blueberry kick this summer, so this fits right in. Way to go getting rid of so much stuff. I need to go through my clothes and set some aside for donations. It's such an undertaking!

    Looks delicious! I'm definitely making that this week. Can you substitute regular/whole wheat flour for the spelt flour?

      Hmmm... I'd recommend trying Whole Wheat PASTRY flour instead of regular - it has a softer texture! Let me know how it turns out :)

    Looks delish! I second that about the post-clothing-purge feeling of freedom. I have to clean out and giveaway clothes at least a couple times a year - it feels SO good to pare down my closet and get rid of the silly things that just sit there looking bored.

    I'm not a huge fan of blueberries, so I think I'd sub something else in (raspberries, maybe) but that looks delish!

    This looks super moist and delicious! When is your big move? Mine is this coming weekend! I have been packing kitchen boxes all day long, it seems. It's really cool to move to a new city. It feels like a fresh start, even though it is just another chapter in life. :)

    I have a HUGE container of European Style Yogurt - which, as it turns out, does NOT taste like Greek Yogurt. Or any other "tasty" yogurt, for that matter. Gross - that needs to be used ASAP! In other words, I'm happy that you've posted yet another delicious recipe that I want to try, and also happens to require yogurt. Whoop! ;) good luck with the packing!! SEE YOU FRIDAY!

    Looks so good! Quick question: Can I sub whole wheat for the spelt flour? Why do you use spelt flour in this recipe? :-)

      I used spelt flour because it's awesome! I'd recommend picking some up. It has a really nice, doughy texture and is very nutritious. You can use whole wheat flour if you want, but it might make the bread a lot more dense. Maybe try whole wheat pastry flour instead.

    I've been looking for a healthy lemon loaf recipe, but I couldn't find one, so I used this recipe but I excluded the cinnamon and blueberries and added 2 T lemon zest and 2 T lemon juice instead! I also used vanilla soy milk instead of skim, and topped it off with chia seeds. It came out PERFECT. Just how I wanted! The spelt, yogurt, and applesauce made it soo chewy and delicious. It is darker than a regular lemon loaf because of the brown sugar, but tastes the same, and so much healthier. Thanks!! :)

    How quickly do you go through one of these loaves? I think I have a bit of a will-power control problem..... I ate about 1/3 of this loaf in one day. I think the idea that it is healthier than other cakey breads makes me somehow think that it is okay to eat it all at once.... hahah help!! I must stop doing that /:

      I'd recommend freezing half right away and then savoring the rest slowly :) Even if it's healthy, the calories will still add up of course! I'd limit it to one thick slice per day :)
