Hi friends! The fun continues here in the Outer Banks! I just got in a great run this morning – it was humid but cloudy so not crazy hot.
4 miles at a nice clip with 2 (untimed) stops for mini boot camps. Felt good to move!
Yesterday’s fitness adventure was some seriously intense water volleyball tournaments. ;) We set up this inflatable net at the pool at our house – so fun!
I also hit up a yoga class earlier this week at my old fave from last summer – Duck Village Yoga!
A few of the ladies and I walked over there on Tuesday morning for their 8:30 a.m. rock ‘n’ flow class. Such a cute, cozy studio!
On the food front, we’ve been eating well! On Tuesday night, Matt’s dad made everyone a big feast – starting with homemade gazpacho with a toppings bar!
Our main course was this beautiful seafood paella.
Making it was quite the involved process – I was so impressed!
It was as delicious as it looked! For dessert that night, we had homemade cinnamon ice cream (amazing) on top of Duck Donuts! Delish.
Post-dinner concert courtesy of Matt and his brother Drew. :)
Sadly, Matt had to head back to DC yesterday because his final presentation for grad school is on Friday/Saturday, but I’m sticking around until Saturday night or Sunday morning.
Last night, we left the babies/toddlers at home with the grandparents and all the adult “kids” went out for a night on the town at Aqua! Here I am with my sister-in-law Jess and our future sister-in-law Morgana, who recently got engaged to Matt’s brother Drew – yay!
Prosecco, obviously.
We shared some appetizers to start (their fries are amazing), and I had a big salad with strawberries, feta, and seared tuna for dinner. Hit the spot!
We were treated to a gorgeous post-dinner sunset.
Time to get back to relaxing! Have a great day, friends – and check in tomorrow for a new recipe. :)
Looks like such a beautiful place!!! That shot of dinner overlooking the lake is incredible! Tuna?? Yum!
Paella!!!!!!!!!! So cool that you guys made it from scratch. I need to get on that. Any chance we can get a post with a step-by-step recipe?
I’ll ask him what recipe he used and hopefully get a link to share with you!
Okay, he just got back to me! Here’s a great source for everything paella – he got the Bomba rice (important to get right short grain rice…), smoked paprika, piquillo peppers, chorizo sausage, and a good recipe suggestion from these guys: http://www.paellapans.com/. As for a basic paella recipe including the all important soffrito, it can be found here: http://www.foodnetwork.com/recipes/tyler-florence/the-ultimate-paella-recipe.html — Hope you enjoy!
Yessssssssssssss. Sending this to my significant other ASAP. Thanks!
What an absolutely awesome vacation! The eats look amazing and that yoga studio is so cute! Enjoy the rest of your time with loved ones!
Love the Outer Banks- staying in a big house with family all week long is so much fun! The seafood paella looks amazing- Matts dad is quite the chef!! Enjoy the rest of vacay :)
I’ am really impressed about rhe gazpacho and paella! I ‘ am Spanish so usually when I read something about gazpacho and paella in a blog is far from reality, but yours looked pretty close! You even used a paella pan!!
He ordered the paella pan especially for this and did a lot of research, too – he will be so happy to hear his version was authentic! :)
How do you like your Garmin? I use the Fitbit Charge HR and its fANNEtastic!
I love it!
Wishing Matt good luck on his presentation!! I can see the light at the end of the tunnel!! :)
The sunset is beautiful!
wow, matt’s dad is quite the cook! his meals always look extra lovely :)
do you know approximately how he makes his gazpacho?!
I’ll ask him if he has a link to a recipe that’s similar to what he did!
Okay, here’s the recipe Matt’s dad said he roughly followed for the gazpacho! http://fountainavenuekitchen.com/gazpacho-and-a-toppings-bar/
Such a fun time With yummy food!
That paella looks like quite the production! I’d love to try that one day.
Sounds like a fun trip! The food also looked tasty and healthy!
Wonderful! My family is from Ocracoke and Hatteras and I grew up in Morehrad City!
Looks like an awesome beach week!
Yay! Congratulations on the happy news, and nice paella! ;)
