Pho-Nomenal

Good morning!

I had a great day yesterday — Wednesdays (and Fridays) are awesome this semester because we don’t have any class. I feel very spoiled. It’s so nice to have a full day to buckle down and get some serious work done! And to not have to worry about packing lunch. 🙂

On Sunday, Matt and I were craving pho (the Vietnamese soup), but our favorite place was closed, so Matt felt inspired to make homemade pho instead! (Sometimes I feel like maybe he should have a food blog instead of me!) He even made it all pretty like we were in a restaurant with all the toppings on the side.

Yum.

He used a combination of recipes he found online, but basically he made a broth from chicken broth, fish sauce, 1 sliced onion, baby carrots cut long ways, and fresh mushrooms, plus a tea infuser stuffed with cloves, ginger, anise, and garlic. We both had no idea that cloves were in pho usually! He also added sliced cooked chicken to the mix (two breasts cooked in the broth, then removed, sliced, and added back in) and whole wheat rice noodles, which were cooked separately.

Plus fresh basil, cilantro, jalapenos, limes (for juice), onions, and bean sprouts for topping. Sriracha hot sauce was also involved. 🙂

I enjoyed the last of the leftovers for lunch yesterday.

In other news, the trees outside our porch have started flowering already! Gorgeous. They make our porch so happy looking.

I made the most of yesterday and was super productive doing homework, blog work, and a billion loads of laundry, so by the time 2 p.m. rolled around I decided to reward myself with a walk with my friend Lindsey. It was SO gorgeous out — 65 and sunny!

Lindsey is still doing great post-baby and starting to get back to running, too! She said she and her husband Tim have been alternating who stays home and watches the baby at night and who gets to go to the gym. Sounds like a smart system! Hayes is now 3.5 weeks old — time flies. He came with us for the walk. 🙂

The rest of yesterday was filled with getting more work done, and with an evening trip to Franklin Street Yoga for my favorite power yoga class, followed by MORE work! It was a very productive day — which is good because today I have class all day and then I’m flying out tonight to Miami! Matt is still working down there during the week (he stayed here until Wednesday this week to be here for Valentine’s Day, which was very sweet, but normally leaves Monday a.m.), so he is still able to either fly home on the weekends or fly someone to him (on his company’s dime). He also still has a ton of hotel points from so much work travel, so we decided to have another (free) weekend getaway in Miami before he is done with his project down there and working back in DC again come April. I can’t wait!

I’m off to class — I’m feeling good because I ran 7 miles this morning (!!! my longest super early morning pre-work or class run ever!). I’ll share the details tomorrow. 🙂
