Private Practice Internship Week 1!

When I was interning at the hospital earlier this summer, I received $5 worth of meal tickets every day, so I got in the habit of just bringing something small (leftovers, a salad, whatever) and then just getting some snacks/side dishes at the hospital cafeteria to supplement it and snack on later in the day (iced tea, apples, oranges, hummus and crackers, granola bars, etc.). Now that I’m done with the hospital and interning with Rebecca (click here to read more about my internship), it’s back to real packed lunches!

One of my favorites that I’ve made a couple times this week is a big salad of mixed greens, cherry tomatoes, cucumber, green pepper, avocado, some brown rice (90 brown rice rocks for quick lunches), plus a huge scoop of hummus on top. So good! Top with a little olive oil and balsamic, and some cracked pepper.

On the side, I had a peach:

And some leftover black cherry Chobani Greek yogurt for an afternoon snack.

I also had some pistachios in my bag to snack on in the afternoon. All thrown together into this cute lunch box that Chobani gave us at the EVOO dinner they hosted last weekend in Boston!

This week has been fun — so nice to mix it up from the hospital! So far this week, I’ve been observing Rebecca counseling clients and helping with assessments, doing some recipe testing, and also helping with prep and setting up for media appearances! On Monday, Rebecca was on Let’s Talk Live, a DC-based morning talk show — it was so fun to go to the studio, help set up, and watch it all be filmed! Here I am on the set. 🙂

It’s been really helpful to see a behind the scenes look into what goes into having a private practice as well as getting ready for a media appearance — yesterday, it involved baking muffins that will be shown in the segment!

I’m heading straight out from work tonight and driving to Cape May, NJ for a fun beach weekend with two of my college BFFs and bridesmaids! We’re hoping for good weather — this will be my last beach hurrah of the summer! Can’t believe how quickly summer has gone by.

    Love the brown rice salad idea! I actually just bought some individual 2 serving containers of brown rice from Costco...this will be a great way to use them up. How cool that you are getting to set up for media events?!?! Love the cute Chobani lunch tote!

    I'm starting school tomorrow so today's def going to be my prep day..roasting all sorts of veggies is in order! Dump and mix = my school lunches. Wow! Looks like you're having a blast! You look like you belong behind the camera, Anne! And I certainly wouldn't mind baking for work ;) Have fun this weekend with your friends!
