Simple, Delicious Lunch

Good morning!

Sometimes the most delicious meals are the most simple, don’t you think? Yesterday’s lunch hit the spot.

I enjoyed a massive salad of mixed greens, green pepper, canned beets (my fave — not pickled, just regular), and avocado, topped with some cracked pepper and balsamic vinaigrette.

Plus a whole wheat English muffin with almond butter and honey.

Mmm… almond butter + honey = happiness.

So satisfying!

I also enjoyed some clementines and a kiwi to cleanse my palate after lunch. 🙂

The rest of yesterday was filled with blog work, school work, a bit too much procrastination (I must have been way more productive before Twitter and Facebook existed…), and enjoying the beautiful flowers blooming outside our porch. It’s like a pink wonderland out there.

I took a short walking break in the middle of the day, and at 5:45 I headed to Franklin Street Yoga for my favorite “Rock Your Asana” class! I just love that place. They make yoga so fun. We were all laughing half the class. 🙂 Killer workout, too!

I just got in my standard 4.5 mile Thursday early a.m. run (so happy it’s light out again in the mornings now! …at least until the clocks change again in a few weeks) and now I’m heading off to school for the day. Have a wonderful day!

    Yummo!!! I love almond butter and honey! :) Ooooohhh, have you tried Van's gluten free waffles?? They are AMAZING!! I had one this morning with almond butter and honey. They are seriously so good! I bought them at Publix here in GA.

    Sounds like a great start to your day! I love Yoga and went twice a week in college, but I haven't found a studio I've loved since. Rock your Asana is a hilarious name, I love yoga with a little humor, it doesn't have to be so serious all the time! :-)

    LOVE LOVE beets! After you tweeted about them the other day, I couldn't stop thinking about them. I found myself eating them directly from the can last night while prepping dinner (spinach salad with sliced beets, tomatoes, avocado, and grilled shrimp). Honey and almond butter were made for each other. Maple drizzle is nice too. :) Have a great day in class.

    Your lunch looks wonderful, Anne. I am a beet lover too. The trees are gorgeous. Being a diabetic, I eat several mini meals per day and love almond butter and honey.I also love Clementine's or Cuties as they are called here in Georgia. They are just the right size.

    I'm a huge fan of canned beets too! Not those pickled ones served with pink hued hard boiled eggs. My favorite simple lunch lately is Sauteed greens, sweet potato, fried egg, tortilla, and Ginger dressing. Random but so delicious.

    I've been known to eat a wrap every day during the week. It's my go to especially when I need something to take with me to campus. My favorites usually include some time of beans, lettuce, and avocado (always avocado!). :)

    Except for the beets, that lunch sounds awesome. Beets are pretty much the only vegetable that I'm not fond of and I've tried them cooked about every way possible.

      I've always loved them - my grandmother used to feed me boiled beets fresh from her garden when I was little - I think that's why I've always liked them :)

    I have never tried canned beets. Do they taste similar and have a similar texture to fresh beets? This salad looks delicious and quite filling! Anything with avocado instantly makes me drool! I have a pomegranate balsamic vinaigrette that I think could really make this salad shine.

      Yes, they are just as good! Just buy regular canned beets - not pickled!
