Snow Day!

We got snow this week in Pennsylvania (we are here with my in-laws for basically all of December)! How fun!!

Riese was so excited. She saw snow last winter when we were in Aspen, but that feels like forever ago, both in terms of time and also whoa, remember when we could travel and do stuff?! Weird…

My in-laws’ backyard has a perfect size little bunny hill for toddler (and pregnant mama) sledding. We went up and down a million times on Wednesday and Thursday!

Riese was also really into eating the snow. Don’t worry, we told her to avoid any yellow snow!

I do miss snow days back before the internet when everyone was off work, though… 🙂 

As for food this week, we’ve had all sorts of good meals! Our snowy day dinner was a really yummy bean soup with sausage and veggies courtesy of my father-in-law.

He used one of those “15 bean soup” packets that’s basically just a ton of dried beans and peas, simmered for a long time til they were soft, then added some sausage and some seasoning (we did our own seasoning because the packets they include are usually just lots of salt and not that delish) along with a can of diced tomatoes.

It came out delicious, super savory which I loved! 

Plus some homemade cornbread (I know, we eat so well here) and salad.

Speaking of beans, have you tried roasting chickpeas yet?

They get really delicious – a bit crunchy! Great on salads or grain salad bowls, like my Fall Harvest Salad with Watermelon or my Vegan Kale Caesar Salad. Just toss them in the pan when you’re roasting other veggies, it’s easy!

We also had some great cedar plank salmon this week on the grill – one of my fave ways to enjoy salmon!

Last night was taco night, which is always another fave!

I piled mine high with cheese, guac, sour cream, tomato, salsa, cilantro, and lettuce, and went back for one more soft taco after this pic. Delicious!

As for lunches, we’ve been having leftovers, sandwiches, salads, etc. I’ve been making a lot of big salads and usually have a sandwich or something else on the side – this time it was leftover pizza!

I’ve also been enjoying sandwiches with turkey, cheese, mustard and sauerkraut – good combo!

For breakfast, I brought back my old friend High Protein Oatmeal!

I made it for Riese and my father-in-law as well, and asked him what the secret ingredient was and he was stumped. It’s eggs! You can’t taste them, they just make it fluffy and add protein. 🙂 Try it!

I’ve also been really into omelettes. This one was ham and cheese! I find I really need two breakfasts these days (hi, pregnancy – but also in normal life generally, the two breakfasts are just a little bigger now than they were before). Usually first breakfast when I first get up is toast with nut butter and fruit, or some oatmeal. 

Then second breakfast around 10 a.m. is something more savory and protein packed, usually featuring eggs. Speaking of, in case you missed it, you must try my Sausage Egg Casserole recipe that I posted on Wednesday – it’s so good and makes great leftovers.

I hope you all have a nice weekend, and I’ll catch you back here on Monday. It’s still super snowy out there so we are going to do more sledding and playing!

I’m also planning to try to do a virtual yoga class at some point because after all the sledding and running around in the snow with Riese plus two virtual MauneyFit classes this week, I’m feeling quite sore and stiff! Anyone have any fave yoga video recs to share? I’m mostly still doing regular (not prenatal) yoga and just modifying because I like more of a flow class, but I’m open to ideas. 🙂

Nothing too intense or too long, though, please – my attention span is about 30 to 45 minutes for virtual yoga…

    Harlow's Earth on you tube has a specific yoga practice for each week of pregnancy. I really enjoyed them when I was pregnant- they were right on with what I was craving physically and mentally each week

      Interesting, I like the week-by-week idea! I feel like often the generic prenatal yoga is more suited for those in the third trimester vs. earlier on. Thanks!

    502 power yoga podcast is amazing. Most are 60 mins but I love the 30 min power flow classes too!

    EricaYogaDance (that’s her insta) is a Boston yoga instructor who I loveee. Her classes are all very flowy and get you moving and usually sweating. She does 3 classes on Instagram TV each week (there’s a 45 min Friday one that will be up for the weekend) or on her website (same handle just add .com) you can purchase on demand classes! All different lengths

    Yoga with Adriene is a great YouTube channel with a variety of different types/difficulty levels available. She is a lovely virtual instructor :)

    Peloton yoga! They have prenatal classes, great music and varying lengths. They have a free 30 day trial.
