Taco Sunday

We decided that we couldn’t wait for Taco Tuesday – Taco Sunday it was!

Ground beef + black beans + tomato + avocado + yellow pepper + grated cheese + cilantro from our herb boxes. So good!

Another delicious dinner from the weekend: on Friday night, Matt made us grilled chicken pesto pasta with mushrooms, artichokes, and broccoli.

Plus extra basil from our little garden box!

Matt pan seared the broccoli and mushrooms, and also brined the chicken first to make it extra juicy. It was really good!

Pesto chicken pasta has always been a favorite of mine – I used to make it a lot for myself when I was living with roommates right out of college! Although I definitely wasn’t brining chicken… had to keep it simple in those days. 😉

The other dinner we had this week was takeout from Stomping Ground in Del Ray – they have been doing Andy’s Pizza nights and you can get pepperoni pizza + salad. So good! Pepperoni is my fave.

It felt like summer on Saturday so we ate outside. Riese had fun with this cute sprinkler attachment (affiliate link) I just bought last week!

For breakfasts this weekend, one day I had this yummy egg wrap with wilted greens, scrambled eggs with cheese, and tomato. It reminded me I need to make another big batch of my Make Ahead Breakfast Burritos… having those on hand is so convenient.

And another day we had banana and pecan pancakes – I topped mine with some plain Greek yogurt and seeds.

Lunch on Saturday was lots of leftovers from the week cobbled together, and lunch yesterday was a little snack plate of sorts – I like meals like this that have lots of tastes and textures! 

I had some smoked chicken, cheese, challah bread, raspberries, pickled veggies, and hummus, plus some leftover salad from pizza night.

Most of the lunch plate stuff was via Neighborhood Provisions – it’s a cool food and grocery delivery situation local to DC that just got started recently by Neighborhood Restaurant Group (they own a bunch of local restaurants) to help keep their staff employed and their produce and products in people’s hands!

I found out about it through one of my good friends who works for NRG. The website was easy to use and everything came packaged up nicely – highly recommend! I like that you can get pantry and grocery items as well as beer and wine and some popular prepared foods from their restaurants, too.

As for fitness this weekend, on Friday morning I did a walk/run phone date with my friend Kathleen – it was steamy out so I did more walking than running, but as always getting some fresh air and movement and a little time to myself before a busy day of toddler wrangling always improves my mood x 1,000.

And on Saturday we did our usual live virtual boot camp with Riese assisting (and then watching some Daniel Tiger when she was tired of assisting).

I will leave you with one last photo: Riese’s new favorite thing is to have a “latte” with us, so we’ve started frothing her up some whole milk with cinnamon and she enjoys it in an espresso cup. <3

    We love making grilled chicken pesto pasta! We love the refrigerated pesto at Costco and always have it on hand.

    Awesome to see Great Lakes Brewery in your provisions. I live near Cleveland and if you have never tried the Christmas Ale at Christmas time! It is a big deal around here and so delicious! I highly recommend it! Enjoy the day!

    Is that chicken breast he is brining? I had never thought of doing that. Do you mind sharing his brining technique for chicken breasts?

    Love it all, but especially the latte for the little one! And, again, please consider a bed and breakfast with Chef Matt when social distancing is in the rear view mirrors!
