Hello friends!

It’s official — I’m DONE with Microbiology!! Woop! 7 prerequisites down (Chem 1, Chem 2, Organic Chemistry, Bio 101, Anatomy & Physiology, Human Nutrition, Microbiology) — and just one left — my online BioChem course! Sooooo close 🙂 I can’t believe how much I’ve accomplished since last summer!

I pried myself away from my riveting BioChem studying and went to meet the lovely Heather for lunch! Heart this girl:

001

This is Heather’s last week at work — she’s moving to Colorado in two weeks! Wahhh! The only reason I’m letting her leave is because I’m moving two weeks after her 😉 At least I’ll get to see her again in August at the Healthy Living Summit (she’s a speaker, too!)

We met up at one of our fave vegetarian restaurants right near her office in Virginia: Sunflower Vegetarian!

012

I ordered the “Adventure of Tempeh Land”, heh, just because it has an awesome name. Thankfully it was also tasty 🙂

003

YUM! Organic tempeh sautéed with red bell peppers, snow peas, asparagus, baby corn, and white mushrooms in a Thai-style curry sauce served with brown rice:

004

Delish! I ate a little over half and took the rest home 🙂 I’m really into tempeh recently. I first tried it in Prague, randomly, and have loved it ever since! Have you guys tried tempeh? Are you a fan? If you’ve never tried it, I highly recommend it! It’s really different from tofu — much denser and “meatier” almost — the texture is way better.

Speaking of tofu, Heather had the organic grilled tofu and veggie sandwich. Pretty!

006

And then, we decided we needed to try tofu ice cream. Yes, tofu ice cream. Behold:

009

Looks like regular ice cream, right?! This was the “vanilla almond bark” and it was actually really tasty! It didn’t taste like normal ice cream, but it was good 🙂 We were impressed.

Time to get back to studying. Have a great day and go eat some tempeh 😉

I loooove tempeh. I recently discovered it and love to use it as a source of protein in salads and sandwiches. I have to experiment more actually cooking with it!

NOM - way to go, Tempehland! Setting the tone. I definitely prefer that to Tofu; my sandwich didn't even have a cool name, dangit. ;) My campaign to move you West in approximately 2 years will commence soon! Our separation will only be temporary, heh.

I've never actually tried tempeh because I find it a bit intimidating for some reason. I think I've just got to pick some up and get a bit adventurous!

I'm a big fan of having it raw on a sandwich/wrap with some laughing cow cheese, BBQ sauce, tomato, and fresh spinach. Or, toss it into a stir fry or a rice and veggie bowl!
