The Perfect Sunday

Yesterday was just about the perfect Sunday — it involved playing with Tina, ice cream at Maple View Farm, and biking with Matt in the beautiful NC sunshine (which rudely hid until Tina left, lame)!

Our day began in Carrboro, the cute hippie town right next to Chapel Hill. I took Tina to one of my faves — Open Eye Cafe!

I love the vibe in this coffee shop — busy but relaxing and funky at the same time 🙂

I had their “winter blend” tea — it was delish!

Tina and I sat for nearly an hour chatting and enjoying our drinks — love that girl! Wish she lived closer 🙁

After some exploration around town (although sadly the weather was cold and gray yesterday morning, boo!), we headed to lunch at another of my favorites, The Spotted Dog.

I knew Tina would love this place because not only does it have a creative, healthy, organic and vegetarian-focused menu, but it also has pictures of dogs all over the walls! 🙂 Tina has a pug and is kind of obsessed, heh.

I ordered the house made vegetarian Black-Eyed Pea Burger for lunch, which came topped with chipotle sauce, tomato, lettuce, and cilantro. YUM! The cilantro totally made this sandwich.

I was so bummed to drop Tina off at the airport and say goodbye. I miss you already, girl! Come back soon 🙂

Tina was joking that bad weather follows her wherever she goes, and sure enough, of course the second I dropped Tina off the sun came out and it was suddenly warm and amazing outside again. Wtf, NC? Why you gotta play us like that?

Matt and I decided to take advantage of the suddenly awesome weather and go biking!

I’m really loving our Sunday bike rides as of late. We did the same loop we discovered a couple months ago — nearly 16 miles with lots of beautiful scenery 🙂

I think we’re getting better at biking — it feels easier and we’re faster, too! Exciting 🙂

Sadly it’s now Monday again, Matt is on his way back to DC for work, and it’s time for me to get back to the grind. I just ran a great 3.5 miles with my friend Jillian here in my neighborhood and now it’s time to get down to work before heading to class! It’s going to be a busy week — can you believe I only have 3 more weeks left in the semester?! This spring has FLOWN by. In fact, this whole first year of grad school has flown by! Crazy.

    NC is pretty. I have a sister who lives in Bryson City NC I visit often. That black- eyed pea burger looks great. Do you have a recipe for that one? Love your pictures.

    Wow, what a great day! I'm really looking forward to my semester in NC (I'll be in Asheville) in the fall - it looks gorgeous. That farm with the ice cream always makes want some good old fashioned ice cream, so I'm a little jealous of that :) Alsooo pretty jealous you only have 3 weeks left - I have 6 counting exam week.

    I miss Maple View! Glad you are enjoying the Chapel Hill area. Have you tried Elmo's in Carborro? It's right near Weaver street market. I miss the NC spring (we are in Oregon now where it rains a lot all winter but the summers are perfect) but I won't be missing the everlasting summer heat/humidity. Enjoy the spring though, that is the best time in the Triangle!
