Tower ‘O Lunch

Morning, friends!

It’s back to the daily grind over here. That means lots of packed lunches! I’m still enjoying my leftover Sweet Potato Lentil Chili (plus quinoa…) — I’ve discovered it’s 1,000 times more delicious with feta on top:

I also packed up a Chobani lemon for some extra protein — LOVE this flavor.

And some of the most delicious grapes ever. Huge and juicy.

Yum, yum! I also packed my tea mug and a couple packets of tea, as per usual. Just add (free) hot water! 🙂

Afternoon snacks will include some nuts/trail mix lurking in my backpack. I always keep emergency snacks in my backpack. All hell breaks loose if I get too hungry.

I’m wearing a fun new (well, not really, I got it a few months ago and just haven’t worn it yet) dress from Target ($20, obvi) today in honor of the fact it’s going to be 70 degrees! I also busted out my favorite fall earrings — they’re shiny, gold colored, and shaped like leafs! I got them at Aldo earlier this year. I love big earrings — they make me happy. 🙂

    My go-to work lunch is rather boring, but it's delicious, healthy, easy and requires minimal time in the office kitchen (just the microwave.) I make a big batch of brown rice at the beginning of the week and bring a container of the rice, chickpeas, veggies and Earth Balance to work. Depending on what spices I add each time, it's almost like a completely different meal each day. :)

    Cheese is the perfect way to take leftovers to another world! Send some of you're heat our way, it's 3 degrees (celcius) here in Dublin. Such a good time for grapes, can't get enough of them, who need's sweets when you can red juicy grapes :)

    Ooooh, such pretty earrings! Love. For lunch I have salad (with cucumbers, tomatoes, hummus and a pinch of sliced almonds), about a half serving of leftover noodles from dinner the other night, and an orange. I tried to pack it in under 5 minutes a la Anne, but it took me 10 minutes... but I was also packing snacks and my breakfast. Maybe tomorrow I'll get in under 5!

      Sounds yummy! Packing snacks and breakfast, too, totally allows you 10 mins instead of 5. :)

    I packed brown rice with a Mexican seasoned veggie on top: black beans, eggplant, onion, and zucchini. Apple and trail mix for snacks!

    I love big earrings too, Anne, and those are lovely. I love Target too. I have a sister that has worked for Target for 12 years. I am lucky to receive discounts now and then. Love the Chili, I have made it numerous of times.

    Sounds like a yummy lunch! My lunch was actually fairly similar to your's - butternut squash and apple soup; vanilla chobani; strawberries!

    My favorite super easy go-to lunch is this: One can of chickpeas (rinsed, drained), and a can of pizza sauce (or tomato sauce with seasoning)- add in a cup of veggies of choice (I usually go with marinated artichokes from Trader Joe's, spinach, or cooked broccoli). Cheese optional! Dump all ingredients into a tupperware and mix. Makes enough for 2 lunches- seriously can't get easier. Just heat it up in the microwave!

    Cute outfit, Anne! Love those earrings :) One of my favorite things for lunch these days is a sweet potato. I bring a big one and microwave it and load it up with fun toppings. Filling, healthy, so easy!

    If you like the lemon chobani yogurt then you MUST try Liberte Mediterranee lemon yogurt. It.Is.So.GOOD! My favorite is the coconut but the lemon is a very close second.

    How funny! I am absolutely SURE I saw you on campus today (I'm a grad student in Neurobio), and it was all because I noticed your earrings.. but for some reason in my head I think you're about 6 feet tall, and so I figured I was mistaken.
