Wash Hands, Eat, Repeat

Hi friends – thank you for your kind comments on my post on Monday about whether me posting mattered/made any sort of impact. It means a lot to me to know that by continuing to post I’m providing a small helpful distraction for you guys. Thank you so much for being here. <3

Let’s kick off this post with our yummiest meal of the week: salmon tacos.

This is one of our favorite easy dinners. Just pan sear salmon until cooked through, then flake it into pieces and pile into tacos with guac, cheese, black beans, and slaw. So good!

Another night this week we had a simple pasta dinner using some freezer stuff – we had some frozen pasta from the farmer’s market a month ago that I defrosted, plus some frozen turkey meatballs and frozen chorizo sausage. 

I cooked the meat in a pan, then added some fresh broccoli (florets and also the diced stems, which are yummy too) and chopped spinach and cooked for just a couple more minutes until the veggies softened.

Another easy dinner from the week was pizza. I started with some salad + hard cider while the pizza cooked (it was just a store-bought one).

And then we had the pizza. It was the BBQ chicken frozen pizza from Whole Foods, but it was just so-so – wouldn’t recommend. Oh well, can’t win em all!

For lunches this week, we did some leftovers, I ate one of my make-ahead freezer burritos, and I also threw together easy rice, bean, avocado, and spinach bowls for us one day. (The rice is buried underneath!)

Another day we got Sweetgreen delivered for lunch, which was a nice treat. I love their harvest bowl with chopped kale, roasted veg, toasted almonds, chicken, goat cheese, apples, and balsamic vinaigrette. I added some avocado + cabbage too.

Breakfasts have been easy favorites. One morning Riese and I shared the microwave version of my flour free breakfast pancake, topped with pomegranate arils, cottage cheese, and pumpkin seeds.

We’ve also been having a lot of these muesli rounds stuffed with nut butter and with plain Greek yogurt and berries on the side.

Snacks have been leftovers (from the freezer) of my Cheesy Sun-Dried Tomato Pizza Granola Bars… yum. I like having these on hand when I want a snack that’s not sweet but is portable because I’m heading out the door to walk around with Riese.

I also re-discovered these awesome cookies at the store – hands down my fave cookies ever. Perfect texture (chewy!), perfect flavor, perfect sweetness.

If you are local and see these, get them.

As for fitness this week, I’ve been really missing my workout buddies! I got in two runs… probably around 3 miles each. I have a hard time running much farther than that without buddies!

And other than that I’ve just been doing the occasional yoga video on my phone while Riese naps – 30 minutes is my sweet spot, anything longer than that and my attention span can’t handle it (or it just takes too long because I’m trying to get work done too, etc.). It has been hard to motivate to get these in but I’m always really glad whenever I do. Yoga is always so calming for me.

Normally you guys know I love a good early morning workout because it really sets my day off on a positive/upbeat note, but I haven’t been feeling excited about getting up early to work out alone in my basement, so I haven’t been forcing it. I’m doing what I can/what feels right for now, and that’s fine. It has been fun to see a lot of studios doing live classes via Instagram – I haven’t been able to do any yet because of timing with Riese but hopefully this weekend I can check one out!

I will leave you with the big excitement of the week: one of the fire trucks was outside the station the other day when Riese and I walked past! She’s obsessed with fire trucks and was soooo pumped to check it out. Too cute. 

We also spent some time reorganizing my Nespresso pods this week… extra fun toddler game. 😉 Riese loves helping me make my coffee in the morning and always puts the pod into the machine for me, turns it on, etc. Too cute! She gets very upset if I make it without consulting her first…

Here are a few more things to brighten your day:

  • If you want a book rec, I just started reading The Lost Girls of Paris (affiliate link) and it’s SO GOOD – really draws you in. It’s been nice to escape into a book lately!
  • A Dutch orchestra came together to perform a virtual concert, and it’s so gorgeous. 
  • Mail a Hug from your family to family/friends you won’t get to see for awhile – what a cute idea! 
  • I started following the Good News Movement on Instagram, and I love it. We need more of that in the world.
