My Fave Homemade Veggie Burgers

Hello my friends! Matt and I had a really fun night last night because one of my best friends from college, Lu (aka Laura), and her boyfriend Connor are here visiting! They are on a big road trip (living out of their awesome tricked out van) and swung by DC as part of the adventure. They live out in Berkeley, CA so we don’t get to see them much – such a fun treat to have them here!

I invited them over for dinner at our place last night; they are both vegetarian so it was a good excuse to bust out one of my old favorite recipes: Easy Lentil Veggie Burgers!

I hadn’t made that recipe in way too long and was a little nervous about how they would turn out, but they ended up being delicious! Super easy recipe to use for entertaining, too, because you prep everything beforehand and then when your guests arrive and you start getting close to ready to eat you just pop them in the oven! They don’t look delicious raw (let’s be honest, they totally looked like poop – Matt was a little nervous about them lol) but they taste really good when cooked, I promise. 🙂 I added an egg to the mix to help them bind a little better but otherwise followed the recipe!

Also in the mix: an arugula, spinach, beet, bell pepper, and cabbage salad with feta cheese and my homemade balsamic vinaigrette (minus the garlic). Yummmm. I used canned beets as usual – so easy and awesome.

Ready to eat! Served on toasted sprouted grain buns with some mashed avocado on top. I also threw some ketchup, dijon mustard, and cholula chili garlic hot sauce on top of mine! 🙂

For dessert, we enjoyed some chocolate chip banana bread that Lu and Connor mixed up on their way and we threw in the oven when they arrived. Delicious! 🙂

The four of us hung out on our deck drinking wine and catching up and before we knew it it was 11:30 – how did that happen?! Time flies when you’re having fun! I wish they lived closer – nothing like seeing a really good friend. 🙂 Lu and I were on the same floor freshman year – meeeeemories! Wish our whole crew had been here – we need a reunion!

I was tired after our accidental late night but I had a workout date this morning I didn’t want to miss: a Definitions boot camp (via ClassPass) with Chelsea! We hadn’t been in way too long (their sweet owner actually emailed me a little while ago asking where I’d been!) and it was awesome to be back – LOVE this place. Always such a great workout!

I had some banana bread before heading out the door for the workout (made awesome pre-workout fuel!) and when I got home, I threw together breakfast for myself, Lu, and Connor (sadly Matt missed out since he had to head out the door for work). On the menu: scrambled eggs with a ton of spinach and mushrooms topped with avocado. Plus a side of sliced banana and grapes! Yummy.

Lu and Connor push off later today for another adventure, but in the meantime we’re all working from home together – fun! Feels like my own coworking space. Love the company!

    Looks like fun! I love making a frittata or a french toast bake--something that's easy to throw together and will feed a crowd!

    i love veggie burgers! I really need to get my hands on some sprouted bread :) we always do roasted veggies when guests are over- usually it's their first time trying roasted veggies!- and a "bar" for breakfast-- types of yogurt, fresh and dried fruit, granola, cooked steel cut oats, and sometimes scrambled eggs with veggies, and sauteed spinach!

    Those burgers look great!! I need to try these. I love spending time with old friends. The time always flies, and it never feels like it's enough!

    Yum that whole meal looks great! Lets be honest though, whether its a veggie burger or raw meat burger...it never looks that great until its cooked! They look really good once cooked though :) Nothing beats a fun night with friends and/or family! My go to meal is usually some kind of stuffed peppers or some type of pasta bake.

    Random question- it looks like you used some sort of spray on the pan to cook the burgers. I've read Pam is terrible for you- what do you suggest? Olive oil in a spray bottle?

      Yeah, PAM is gross. We mix it up and use olive oil in a spray bottle, or olive or canola oil just spread around with a paper towel, or one of the organic Whole Foods cooking sprays like this one.
