Weekend

On Friday night, it was rainy and dreary and we thought pho sounded like a good idea, so we hit up Pho 75 in Arlington. The best! Regular chicken pho for me, large beef pho for Matt.

Saturday morning was all about relaxing – and pancakes! We used this mix which is still our current fave, and added some chia seeds and blueberries in addition to their normal add-ins (milk, eggs, oil).

Plus some strawberries and pure maple syrup (and I added a dollop of plain Greek yogurt after this picture, too, because I love the yogurt/pancake/syrup combo).

We took the dogs for a couple walks and did a bunch of stuff around the house during the day. One big item on our agenda was to revamp our guest room! We are turning our guest room (on the main floor) into Matt’s office/guitar room, and then Matt’s former office/guitar room (upstairs with our bedroom) is going to be the baby’s room. Matt was on a roll and by last night we had all the guest room stuff broken down and moved to the attic, and all his furniture set up in a configuration we both liked (the room is tiny so we had to get creative). Next up for another weekend will be picking out baby furniture, cleaning out the closets, moving down the rest of Matt’s stuff, etc. One thing at a time!

We broke for some egg salad wraps around lunchtime – I made the egg salad with mayo + dijon mustard plus salt and pepper. On Rudi’s gluten free spinach wraps (Matt is still mostly gluten free for now) with some extra veg on the side!

For dinner on Saturday, we had my parents over for a feast! Grilled steaks + roasted potatoes + salad. Delicious and fun to host them!

On Sunday morning, I met my friend Sarah for a fun jog/walk date! She’s training for a half marathon coming up in September (the Parks Half Marathon <- recap from when we did it together back in 2013, it’s a good one!) but had already done her long run on Saturday – perfect to do a casual shake-out with me the day after. I definitely like my workout buddies to be tired already when they meet up with me nowadays. 😉

We met in Georgetown and did some jogging and some walking down to the reflecting pool and back. It was so fun – made me feel like my normal self out doing a run date! I don’t know that it’s the actual running I miss so much (although I do love the feeling running gives me, and the endorphins), but rather the quality time with friends that running affords me. So this was a special treat. I hope we can do this more often again as the weather continues to cool – it had been way too long!

Also, on my to do list today is to buy a few more of those tanks (the Brooks Ghost Racerback Tank) – it’s one of the only ones that still fits me comfortably right now, and it’s nice and long to accommodate the growing bump!

After our walk/jog, it was brunch time! Sarah and I headed to Kafe Leopold’s for iced lattes (half decaf for me) and avocado toast with poached eggs (I asked for mine to be cooked a bit longer).

The rest of yesterday was dedicated to getting more stuff done around the house, and to taking the dogs to the dog park!

Matt and I were feeling something light for dinner last night – he just wanted a salad, but I was in the mood for more eggs (apparently eggs and I are having a moment right now considering how many I ate this weekend, sheesh). I whipped up salads, had leftover roasted potatoes with ketchup, and Matt made me an egg and cheese omelette to go with it. Hit the spot – I love breakfast for dinner. 🙂

I’m working downtown today – it’s looking like a busy, but not totally insane, day, which is always good for a Monday. Have a fabulous start to your week, my friends!

What’s your favorite way to eat eggs, if you’re an egg fan? Clearly I like them pretty much all ways, but over easy is my ultimate (non-pregnancy) fave, followed by omelette form. 🙂

    Those pancakes look great! I'm definitely a scrambled egg type person, but I eat a lot of hard boiled just because they're easy to carry around.

    I really never get sick of eggs! I love them all, but scrambled followed by fried are my favorites. But I could go on and love every single form. Ha! That egg wrap looks delicious.

      Not poached, but I've microwaved a scrambled egg before - makes a nice egg patty for breakfast sandwiches! :)

    Oh, Pho 75! I used to live in Arlington (and now live overseas, in a country that has yet to discover the wonder that is pho); I miss that place so badly! Good choice. I'm glad you're getting some running in!

    I love getting baby rooms ready! We waited until the last minute. It was a mess and at 38 weeks and 5 days, I decided to get it all done. Then I was unexpectedly induced the next day. Guess our bodies have a way of knowing when we have to get stuff done! I'm impressed with how healthy you keep it while pregnant! I ate okay in the second trimester, but all I ate was sandwiches in my first trimester (I didn't eat bread at all before getting pregnant, so it was a huge change) and then in my third trimester, I lived off tortilla chips (I don't even like chips regularly), pineapple, and apples. You had a fun looking weekend :)

      It's hit or miss - some days are healthier than others! But I definitely find eating healthier keeps me feeling better physically so unless I have a strong craving otherwise, I go for it!

    I love scrambled with hashbrowns, a good eggs benedict as well as poached in shakshuka with chickpea and zucchini for dinner. For shakshuka I cook the tomato "sauce" separately and then spoon whatever I want into a pan, add an egg, once cooked top it with feta and add some crostini for dipping.

      Hi Jenny! Thank you for sharing this with me. I too am very saddened and shocked by what happened in Charlottesville over the weekend, but that said, my business/blog does not feel like the appropriate place for me to voice my political beliefs or concerns. I have taken action since the election to do what I can to fight racism, bigotry, and hate (I have mentioned on the blog that from January until summer I spent 5 hours a week teaching ESL and tutoring immigrants, and I have also started up a number of recurring donations), but again, I'm not interested in turning my blog into a political discussion board. I hope that you will continue to read and find this to be a positive, supportive, and inclusive space, even if politics are not addressed. Thank you for being here!

          You're right - while they are certainly fueled by the current unfortunate political climate, they aren't fundamentally political - thank you for the reminder. I am very shocked and saddened by the uprising of white supremacists in our country and absolutely do not support them. That said, I would like to take more action in my everyday life, rather than just saying things like "I'm sad about this" on the internet, which I don't feel helps much of anything and is why I haven't brought current events into this blog. Do you have any suggestions for additional ways to get involved if we can't actually be out there in person protesting? What are you doing in your everyday life to fight this? I'm open to ideas, and I'm sure others are too - thank you in advance.

    I love eggs!! I think my favorite is either over easy or fluffy scrambled. But I have to get Matt to make my over easy eggs because I have yet to really master them yet. ;)

    Soft and scrambled (NOT rubbery) is my fave, but I also make a mean apple and goat cheese omelette. Your weekend sounds so nice! Aww Kafe Leopold reminds me I'm going back to school soon (I go to Georgetown!)

    Anne, I have been reading your blog for years. You started off this post by saying "Matt and I had a good weekend"; this was a weekend where terrorists killed people in your own state. I was shocked to read that line, and then to continue reading the post and realizing you would be saying nothing about Charlottesville. You live in the nation's capital. You have a large audience. And yet, you said nothing. I won't be reading anymore. I'm glad you had a good weekend, though.

      Perhaps readers would like to visit Anne's blog to read lighthearted, fun content instead of continuing to bring up the tragedy. She has never advertised that she is a political blog - this is a food and lifestyle blog. If you want to read about the incident, then perhaps a political blog is what you should be searching for. Kath of Katheats mentioned it, but even then that wasn't good enough. People were saying she didn't say enough, get detailed enough. Damned if you do and damned if you don't.

      Hi Polly - you're right, that wasn't an appropriate way to start this post, and I've edited it out. My blog is not a place where I comment on current events (I feel that taking action in my real life in terms of donations and volunteering are far more impactful than words on a computer screen, plus, this is my professional business, and it doesn't feel to be an appropriate space), but I appreciate your thoughts and will be more sensitive in the future.     Anne, I really enjoy your blog, but I am with the critics here. You have mentioned other national & international tragedies on your blog before--the Paris terror attacks in 2015, incidents following the U.S. presidential election, etc. I understand (and appreciate!) that you are prioritizing taking tangible action to make our country a more welcoming place, but I agree that your public platform creates an additional obligation to speak out. You are clearly intelligent and well-informed, but many of your readers may not be. (I spoke to someone yesterday who had no clue what happened in Charlottesville this weekend--true story). Even a brief mention of the tragedy might have more of an impact than you realize. It may also be a good idea to link articles or resources if you feel like your words & sympathies are inadequate (pbfingers did this, and I thought it was very tasteful). But whatever you decide to do, silence should not be an option. And to those who say you are "damned if you do, damned if you don't"--anyone who damns you for condemning Nazis are NOT people you want reading your blog anyway!

        Anne, I just wanted to say I am always so impressed with the way you respond to criticism publicly in the comments section of this blog. I understand wanting to keep these things out of your professional space, but I also understand what people are saying about an obligation to speak out (although obligation always makes me cringey). I don't think there are any easy answers and just wanted to commend you for responding with thoughtfulness and grace.
