Hello from the Seattle airport! I’m loving these airports with free wifi
Going back to yesterday, we had a very busy and productive day, starting bright and early to drive to Bastyr University for the open house I came out here for!
I’m definitely glad I came out for it — it was great to be able to actually see the campus and meet some of the staff in their element. The first session I went to was about their Masters in Nutrition (specifically the R.D. track) program. I really love that this school focuses on the whole foods approach to nutrition, unlike the other programs I’m looking at. It was great to be in such a holistic health environment! I mean, seriously, check out the
Larabars? Quinoa bars? Squeezable maple almond butter packets?!?! AMAZING!!!!!!!
They also had delicious healthy snacks around for us to munch on, including these whole wheat blueberry bran muffins (you all know how I feel about muffins!!)
Mmmmm… tasty AND nutritious! I need to create my own recipe for bran muffins I’ve decided… I heart them.
After a couple of the info sessions, I also got to try out their delicious all vegetarian cafeteria! Ahhhhmazing.
I had some of this really yummy curried chickpea soup over brown rice:
And a big ole salad with all sorts of veggies, including beets, kale, and broccoli. Mmmm!
Dessert was some fresh fruit and a little cottage cheese.
After lunch, I took a campus tour. They have a really awesome “Nutrition Kitchen” where they run their culinary classes (everyone has to take a Whole Foods Cooking class as part of the masters, which I would LOVE!!). They also have some really awesome rooms full of herbs for their holistic medicine classes. It smelled so nice There’s even a room downstairs where they run free yoga for students 3 times a day!
So, what are the drawbacks? Well, their program only includes the dietetic coursework, not the internship, which I’d have to apply to separately. So that’s a big drawback. It’s also obviously really far away from my family and a really tiny school. Plus, the gray all the time in winter might get to me. Basically, I have a lot to think about — but I’m definitely going to apply and see what happens from there
I was all finished at Bastyr at 1:30, so Jess and David came back to get me and we headed to the big city to play! It was really cloudy and cold and rainy in the morning, but just as we got to Seattle, the sun came out!!! SO lucky.
Our first order of business? Pike’s Place Market!!!
YAY!! So much amazing produce and seafood (including the guys yelling and throwing it around!):

I bought some delicious dried fruit (no sugar added!) for the plane rides today
Our second order of business — the original Starbucks!! Yessssss… love the old school sign!
And then we decided to walk over to the famous space needle!
In honor of the beautiful afternoon, we just HAD to pay to go up it to see the view
Totally worth it
What a wonderful trip I’ve had. I’m sad that this was my last big trip for quite awhile, but it’ll be nice to be home for more than 5 seconds and not live out of a suitcase anymore, too
Time to board the flight — I’m flying through Kansas City on Midwest Airlines, which I LOVE because they have fresh baked chocolate chip cookies on board!!!!!
