A Vegan Dinner at Whole Foods Boulder!

Hello, hello!

The fun continues here at the Fitness & Health Blogger’s Conference in Boulder, CO!

On Friday night, we were all treated to a healthy (completely vegan!) farm-to-table style private dinner courtesy of the local Whole Foods.

We ate outside, the weather was beautiful, and the food was delicious. Total win!

They set out a huge spread for us — first up — gazpacho soup shooters:

And for main courses — roasted sweet potatoes with lemon and herbs:

Tofu spring rolls wrapped in bok choy:

Mini salad cups wrapped up in cucumber — very creative!

Jamaican jerk tempeh with coconut polenta and mango yellow pepper puree:

There was also some whole grain grilled pizza, shown on my plate below. Both a simple margarita tomato/basil, plus one with grilled peaches on top — YUM!

The tempeh + polenta cake was probably my favorite! SO good.

For dessert, we had these lemon tarts — the crust was made with dates and nuts! Yum.

Such a delicious, colorful, and nutritious dinner. Thanks, Whole Foods! 🙂 You guys rock.

    Yum! Most of it looks gluten-free, too. Now I'm seriously jealous I'm missing all this Boulder fun.

    Oh my gosh, that looks like so much fun! I would die to have just one of those bok choy spring rolls. I am forever jealous that you got a free catered lunch from Whole Foods! I've yet to even step into a Whole Foods! It would be so great to have something like that on a college campus. :)
