PJs and Purple Pancakes

Happy Saturday morning! Since I got back from spring break late on Thursday night, all day at work yesterday I kept thinking it was Monday. So glad it wasn’t :)

I’m running a St. Patrick’s Day 8k race tomorrow with my friend and training buddy Ashley, so no long run today! I decided to take advantage of the extra time this morning and make pancakes :)

The star of the recipe? POM juice!

When the lovely people at POM Wonderful contacted me to ask if I would be interested in receiving a case of their 100% pomegranate juice to review on the blog, I jumped at the chance. Pomegranates are nutritional superstars and POM Wonderful juice (unlike lots of juices on the market) contains no added sugars, preservatives, colors, or filler juices. 100% pomegranate juice from their orchards in California, and nothing else. Yum!

POM juice is a superior source of antioxidants — more so than red wine, grape, cranberry, or blueberry juice, and green tea. Plus, it’s delicious! So far I’ve been enjoying the juice on its own, mixed with water (it’s pretty concentrated), and added in to unsweetened black iced tea for a fun flavor. This morning I decided to try it in a recipe! Enter:

Pomegranate Blueberry Pancakes

(makes 1 serving — one large or two small pancakes)

Ingredients:

  • 1/3 C whole grain pancake mix
  • 1/2 C POM Wonderful pomegranate juice
  • 1/4 C frozen (or fresh) blueberries
  • 1 egg
  • 1 tsp. ground flaxseed

Optional topping: Handful walnuts, 1 small ripe banana, 1 Tbsp. pure maple syrup

Instructions:

Mix all ingredients in a bowl. Pour batter onto a cooking sprayed or nonstick pan on medium heat. Cook a few minutes on each side, until cooked through!

I topped mine with a small ripe banana, which I mashed together in a bowl with 1 Tbsp. of pure maple syrup, and a small handful of walnuts. Yum!

I love blueberries in pancakes. They get so warm and delicious! And the banana/maple syrup combo is my favorite topping — decadent and sweet without having to drown everything in maple syrup :)

I’m heading off to the gym for a light workout (I took yesterday off completely) and then I’m meeting my friend Sarah to go get fitted for our bridesmaid dresses for our friend Jessica’s wedding! Fun :)

    Those pancakes look SO GOOD! I would’ve never thought to use juice in a pancake mix, but it totally makes sense and looks like it makes for super flavorful cakes.

    You should try POM with club soda. It’s a great replacement for regular soda!

    Oooohhhh maaaaaaan!! I just used the last of my POM juice a few days ago in a smoothie for my hubby…damn him!! I’m def gonna have to buy some more now…
