On Tuesday evening, I was reunited with my friend Gena!

IMG_3668

For the past few months, Gena and I have settled nicely into having weekly yoga, food, or walking dates, but since we’ve both been traveling a lot the past month it had been way too long since we’d hung out. I missed her so!

Gena had some fun new recipes she wanted to try so she invited me over for dinner at her place on Tuesday. Catching up over a delicious home cooked vegan meal? Sounded good to me! Look at this lovely spread that was waiting when I arrived – how sweet! And oh, to have a dinner table that gets natural light. You fellow food bloggers will understand. 🙂

IMG_3657

First up on the menu was a beautiful salad. I never think to buy radishes – they’re so pretty in salads!

IMG_3662

We enjoyed the salads topped with some roasted carrots. I also never thought to roast carrots – they were SO good! Very sweet.

IMG_3670

Next up was a fun beet dish since Gena knows I <3 beets: Beet Tartare with Cashew Cheese! (Click on the name to check out the recipe over on her blog!)

IMG_3664

So good. This would work with hummus instead of cashew cheese if you’re not feeling the cashew cheese, but it was a fun addition! I’ll have to try making it sometime myself.

IMG_3660

For our main dish, we had kelp noodles with pesto, white beans, and sundried tomatoes. Simple, nutritious, and tasty.

IMG_3658

Kelp noodles are a lot like rice noodles in texture. Don’t be scared off by the name – they’re good!

IMG_3659

To drink, Gena requested kombucha, so I brought us two different kinds – gingerade and multi-green, which looked exciting. They were both really good! Have you guys tried kombucha before?

IMG_3667

I arrived at Gena’s at 7, so I couldn’t believe it when I looked at my watch and saw it was 10 p.m. before we knew it! Gena’s the type of friend where we can go from laughing hysterically about something silly to discussing the meaning of life in about 5 minutes, and before you know it, 3 hours have passed. 🙂 Thanks again for the fun night, girl! Next time – my place!

I’ve had a busy day filled with AnneTheRD client follow up work from yesterday plus a follow up with one of my in-person clients this afternoon. Time to get back after it! Have a great day, friends!

p.s. I’m excited and honored to share that Women’s Running Magazine has me featured as their “Blogger on the Run” today! In the post, I share the answers to some fun running-related questions, and if you click through and comment on their post you will be entered to win a year long subscription to their (awesome) magazine, too. 🙂

Looks delicious! I love kombucha. We actually "brew" our own, which is SO fun! I'd totally recommend getting into it if you're a kombucha fan. To me, it tastes even better than store-bought, and you can adjust the fermentation time to make it as sweet or tart as you desire.

This one is the closest method to what I use. http://www.thekitchn.com/how-to-make-kombucha-tea-at-home-173858 I'll give you a quick rundown of how we do it too! I brew 8 tea bags in about 2 quarts of water, add a cup of raw sugar (any sugar is fine), and then let it cool to room temp. This is important so that you don't kill the SCOBY! Then I add the SCOBY and a little bit of liquid from my last batch. Cover with a towel and let it sit for 5-7 days. We don't like ours super tart, so if you have a big SCOBY 5 days is probably plenty. Just taste test! Then, when it's to you liking, drain it into a big pitcher. This is where you can add flavorings or whatever! I usually just use about a cup of unsweetened cranberry juice, plus a couple tablespoons of sugar if it's too tart. Also, if you'd like part of our SCOBY, let me know! Ours is huge right now and could use a downsizing, haha :)

Great tips, thank you! Beautiful photos, too. :) I'm going to save this experiment for when we live in an apartment slightly larger than a shoebox, lol. But when we do, I'm all over this!

:) Thanks! And I totally hear ya about a shoebox apartment, lol! I feel like our kitchen is barely big enough to cook a meal in sometimes.

I love kombucha! Though someone told me that the kombucha you buy at the store has been pasturized and therefore, kills the good bacteria which means you don't get nearly (if any) the health benefits from drinking it. I don't know if this is true for all types (or if it's even true), but something to think about. I drink it anyways- as it's better than pop!

The food looks so delicious! I am going to try and roast my carrots for my salad tomorrow. What exactly does Kumbacha taste like? I have major digestive issues and I was told this could potentially help.

Yum! Delicious, healthy food. Wonderful company. No wonder you didn't realize the time ;). I've never had kelp noodles before! They don't scare me at all as kelp is used to flavor almost every soup dishes in Korean cuisine. Beet tartare with cashew cheese is such a gorgeous looking dish! It makes me want to host a dinner party.

I love kombucha! (and have no idea how to pronounce it) but love it. I got a super tangy-lemonade-ish flavor that I can't remember what it was called, and need to find again!

YUM! What a delicious looking meal! I'm vegetarian, almost vegan except I still eat eggs and seafood from time to time. Meals like that make me think I could easily go vegan...now to just learn to cook like THAT! ;)
