A Meat-Free Lunch & Sweetgreen Bethesda

Good morning!

Yesterday began as most other days of my winter break have — a healthy breakfast followed by some computer work, followed by a good workout. Yesterday’s workout was a 4 mile run + some weights/abs. Before I knew it, it was time for lunch!

I’ve been eating a lot more meat than usual over break, so I was really in the mood for something vegetarian for lunch yesterday. I whipped up a big salad:

So good. This was mixed greens, cherry tomatoes, green beans, avocado, green pepper, and goat cheese topped with some cracked pepper and balsamic vinaigrette.

On the side, I had some hummus and whole wheat pita.

I could eat hummus every meal for the rest of my life. So. Good.

Delish lunch. Plus some iced tea! Fun fact — I never put ice in my drinks at home. Anyone else?

After lunch, I headed up to Bethesda to get my hair cut. But first — I met friends Sana and Megan for frozen yogurt at my very favorite — Sweetgreen. 🙂

Today’s plan unfortunately includes some homework. 🙁 Wait, homework? Aren’t I on break? Well… kind of. Sigh. We actually have a policy course for my grad school program (it’s called National Nutrition Issues) that happens over winter break this year — it’s next week on January 4th, 5th, and 6th here in D.C. Convenient that I’m already here, but bummer that it cuts into our break. We also have a bunch of stuff due for the class on the 2nd, so I’m going to try to knock that out today so I don’t have to worry about it last minute. Womp, wompppppp. Oh well. I’ve had a nice couple weeks of relaxing. 🙂 I’m planning on using my computer-on-the-bike trick again this morning to get some of the readings done while getting in a workout, too!

    Hummus is so addicting and I've had it as a staple in the fridge lately as a go to for quick snacks and sides for meals. The salad looks great, I'm a fan of green beans with my salads too.

    Hummus is amazing, I always have at least 2 different kinds in the fridge! Love that stuff! Your fro-yo picture just made me crave frozen yogurt!

    looks like a delicious lunch! i'm with ya on being able to have hummus at every meal - SO good! i've also been in love with goat cheese lately. it's such a great addition to salads.

    I made so delish chickpea hummus two weeks ago and I am a total fan. Yes, I must has chipped ice in my iced tea. Don't need ice for water though.I've never eaten goat cheese, that's my next challenge. I can't seem to get past the "goat" part.

    Haha I also have homework over break. For law school, we're expected to be prepared for the first day of class, aka we have to do the reading before hand... so fun.

    Yummmm! I love Sweetgreen too, and because it's so close to Georgetown, I always seem to find a buddy who wants to accompany me for some froyo :) I also drink things without ice!

    Bummer that you have homework. Hopefully you'll finish it without being to overwhelmed. :) Salad looks amazing! Something that I am missing in my diet as of late. :/ Feel like everything I have eaten lately has been brown....even the healthy stuff has been brown!
