Black Bean, Feta & Quinoa Mess

Oh my goodness… delicious lunch discovery today.

I present to you:


Black Bean, Feta & Quinoa Mess

(makes one serving)


  • 1/2 C cooked Quinoa
  • 1/2 C canned black beans, drained and rinsed
  • Sprinkle of feta cheese
  • Drizzle of balsamic vinaigrette


Throw it all in a bowl and ENJOY! Easiest and most delicious thing ever. I’m obsessed.


I used this fun red Quinoa. And I made a TON — I’m usually too lazy to make Quinoa (since it takes a whole 15 minutes to cook and everything… what?! I love my 90 second grains.), so when I do, I make lots! That way I can easily incorporate it into other dishes last minute :)


I also enjoyed a massive salad chock full of fresh veggies and canned beets, obviously. ;) Whenever the weather gets warm I seriously crave produce and light, fresh salads. Anyone else?


Mmmm. I had some juicy green grapes as well.


And then I set off for a walk! I worked from home today and it’s GORGEOUS outside, so you know I had to get out there.


And you know I had to bring my camera along for you guys :)

What’s your favorite season? I feel like I always think whatever season we’re currently in is my favorite :) So right now I really love spring!! :)

    Nothing as good as fresh fruit and cottage cheese for dinner in the summer! Forget anything that you have to heat up the oven for!

    I love spring and fall. Hate the DC humidity in August! But that “mess” looks great. I should get better about making bigger batches of grains when I make them!

    Love quinoa! Actually just had some for lunch myself.

    As for seasons, I’m a summer girl! Nothing makes me as happy then beach days in the sun! Although, I like any other time of the year too as long as it’s warm. :-)

    Things I love about this post:

    The fact that it makes me want to try quinoa (it sort of freaks me out and I don’t want to waste money on something I won’t like.)

    The fact that it makes me miss the heck out of DC and the blossoms there.

    The fact that I, too, adore salads, produce and all things fresh in the summer.

    BTW, the season I love most is the fall. Nothing compares to the changing of leaves up North :)

      Yay I’m super excited about the Cherry Blossoms! I’m hopefully going to see them tomorrow, too… it’s probably going to be a mob scene but oh well!

    That meal looks absolutely BOMB. It kind of reminds of a jazzed-up form of rice and beans! I’ve had the combo of quinoa and beans in the past, and it really is a great mix of flavors and textures. I’ve yet to try red quinoa, though. How does it taste? Like regular quinoa, or different?

    OMG magnolia trees, those are my fave! My old neighbour used to have one in their front yard and I used to love it when it bloomed in the springtime. I love your recipe today…I’m definitely going to have to try it out sometime–I just happen to have some red quinoa around.
