Oh man, am I glad it’s Friday. Hellooooo, weekend!

I had another one of my “sounds weird but is delicious” (totally just created a category on the blog called that… heh!) creations today for lunch — a canned pumpkin and almond butter pita sandwich!

I used to eat these ALL the time this summer when I was living in Tampa, and totally forgot about them. Mmmmm 🙂

You literally just spread some canned pumpkin on one side…

Some almond butter (I used crunchy Barney Butter) on the other side…

And you are ready to rock! The flavors go together really well… try it and let me know how you like it 🙂

With my sandwich, I enjoyed some plain nonfat yogurt and a sliced juicy and delicious pear. Yum. Love this combo, too!

One of my former roommates and her husband just bought a house in the area and she’s having a few of the girls over for dinner tonight. I’m super excited for some good food, wine, and girl talk! I’m about to throw together one of my infamous Goat Cheese and Beet Salads to bring with and then head out! Stay tuned for pictures 🙂

    i can't really claim this (it's from the Fitnessista), but i love the combo anyway: sweet potatoes and goat cheese. SOOOOOO good! the creaminess of each one is different, but perfectly matched. i might be drooling now hehehe :)

    Oh wow.. that sounds GOOD!!! Kinda strange but I eat almond butter and pumpkin butter sandwiches so I get where you are coming from. I will have to try it like that though!! I don't have any super weird food combinations... I like apples and onions and cheese together but that's not too strange. I do like scrambled eggs with caramelized onions and ketchup...amazing.

    When I was younger I used to have ketchup sandwiches. Luckily I grew out of that phase, but I did like dipping popcorn into cocktail sauce too. Can you tell I like tomatoes?
    Haha I'm obsessed with tomato stuff, too :) I don't know about the tomato sandwiches though, lol! -Anne

    Nutritional yeast on pumpkin and peanut butter oats--it makes it all taste like cheddar!
    I still haven't tried nutritional yeast!! Maybe I'll buy some today when I'm out... -Anne

    Canned pumpkins are tooooo...gourdy for me? I think I would have to add honey and cinnamon. Or maybe I should shut up and try it. ;) I think a combo my hubs and I love is bacon and chocolate. Okay, you caught me, he loves it. I got him a bacon chocolate bar for christmas. It's not bad!
    Ahhh Bacon Chocolate is the best!!! Jenna and I brought some of that around with us in California, just in case ;) Heh! -Anne

    i eat that all the time, doesnt look weird to me!!! :) i usually add cinnamon and maybe some agave as well

    yum! that sounds like a great combo! i'll definitely have to try it out! some odd food combos i have are pretzels and goldfish dipped in ketchup or marinara sauce and cream cheese and jelly sandwiches! these definitely aren't the healthiest things, but they were my favorites as a kid! another odd combo i love is eggs and jam! when i was younger my grandma used to make me grape jelly omelette's! it sounds gross, but it's so good!

    That sounds good! My favorite weird combo I discovered by accident by virtue of having nothing else in my fridge: a baked sweet potato topped with "spiced" kidney beans (regular kidney beans seasoned with cinnamon, chili powder, cayenne and cumin) and smothered with an italian cheese mix blend. SO GOOD!
    Mmmm yes I LOVE beans on top of sweet potatoes :) Especially involving cumin! -Anne

    I've always done the almond butter - pumpkin butter combo and love it! I'll definitely give this a try. I don't know what my weirdest combo is, but I pile leftovers over spinach and call it a salad any day!

    Mine is potatoes and avocado mashed together-it is pure heaven and you don't have to add salt, pepper, butter or anything! Another indulgence is cheesy poofs and salsa. I maybe have it a few times a yr but it is amazing :)

    I haven't eaten this in a long time and it sounds kinda ick, but I love a bagel or toast with cream cheese, ketchup and egg with runny yolk in sandwich form. Mmmmm, add bacon and you have the ultimate sandwich. I haven't eaten one of these in years, but it certainly sounds yummy now... :)

    yum that sandwhich looks delicious! do you order your barney butter online? because i've never been able to find it in the DC area!! i love balsamic vinegar and fruit (strawberries, melons).
    I actually got the Barney Butter last time I was down in Tampa and brought it back with me ;) And mmmm to the balsamic and fruit!! -Anne
