Happy morning after Halloween! I hope you all enjoyed the extra hour of sleep 🙂

I’m back with my second recipe from Thursday night’s party! This appetizer was a HUGE hit! Everyone was raving about it and asking for the recipe. It was so simple, too!

Cranberry Apple Cinnamon Baked Brie

074

Ingredients:

  • 1 wheel brie
  • ~1/4 C dried cranberries
  • 1 apple (chopped)
  • 1 Tbsp cinnamon
  • 1/2 tsp brown sugar

Instructions:

Preheat oven to 350. Take the wheel of brie and place it on a nonstick tray or a sprayed piece of tin foil.

055

First, add the dried cranberries on top.

060

Next, add the chopped apple.

061 062

Top with cinnamon and a sprinkle of brown sugar and it’s ready to cook!

063 064

Pop it in the oven for about 10 minutes or so. I LOVE the smell of cinnamon cooking… mmmm.

Once it’s heated and the apple is all cooked and amazing, take it out…

072

…and serve immediately with crackers. Be sure to taste some now because it will be gone FAST!

Yum 🙂 I’m going to enter this recipe into this week’s Blogger Secret Ingredient Contest over on Lindsey’s blog! This week’s ingredient is dried fruit 🙂

Halloween yesterday was a blast. I have some great pictures from the block party my cul-de-sac had! I had an AWESOME costume thanks to going “shopping” in my neighbors awesome costume closet 🙂 Stay tuned for pictures later! What did you end up dressing as for Halloween?

I’m off to be productive — Chem test on Tuesday and charging forward with my UNC application! Ashley and I were supposed to run this morning, but it’s raining AGAIN 🙁 Gym it is!
