Gourmet Sandwiches & School Projects

Good morning!

I had a fun night last night at my girl Elle’s place — we had to do a group project together for school and decided to best way to do that was to also have a fun dinner involved 🙂 Win!

I love combining fun with productivity 🙂

We decided to make gourmet sandwiches — quick, easy, and tasty so that we could get down to work!

We made roasted chicken breast, bacon, and spinach sandwiches using this delicious ciabatta bread that Elle picked up from Trader Joe’s!

YUM. Clearly the bacon was the best part 😉

I also topped my sandwich with some spicy mustard and some of these caramelized onions that Elle made! I’ve been trying to be adventurous and have onions more often 🙂 I still hate raw ones, but I think I’m starting to like them cooked!

We also made some asparagus to have as a side — just roasted for about 10 minutes at 400 in some olive oil and sea salt/cracked pepper.

It was REALLY good — super fresh and juicy!

I love this little “photo station” stool Elle has set up in her kitchen to take photos of her food with natural light! Natural light is SO key with food photography.

We also enjoyed the rest of my Creamy Tomato Basil Soup as an appetizer/something to dip our crusty sandwich bread into 🙂

All together now!

After dinner, we banged out our school project amidst various fits of laughter. I <3 Elle. 🙂

I’m off to school — another busy day ahead! I’ll also be spending some time today cleaning/tidying the apartment because Tina is coming to visit tomorrow! It’s going to be in the 80’s here this weekend and we have big plans for the pool, BBQing, etc. Plus, a ridiculous 5k adventure/obstacle course race over in Greensboro on Saturday morning!

    That meal is my kind of meal, especially the bacon and onions. Sounds like a fun weekend. You really know how to balance your time between work and fun.

    Pineapple Cho used to be my favorite until they came out with the mango. Although the black cherry is really good too. You just can't go wrong with any of their yogurts.

    Caramelized onions are one of my favorites - so delicious and sweet! I love soup and sandwiches for dinner - so quick and comforting.

    I definitely had a win moment yesterday when sharing the mango one with my toddler and she kept saying "ice cream mommy ice cream". It's really creamy and cold- and she had no idea it's good for her :)

    Mango was released with cherry & lemon. I thought the mango flavor tasted a lot like the peach flavor, but it's still yummy. Your sandwiches look baller. I tried your cheesy coconut chickpeas & kale last night for dinner, but I made it with great northern beans and it was fab. In fact, I just ate it for lunch too! :)

    This has to be the best sandwich combo ever! But of course, bacon makes everything great! I don't often admit on my blog that I'm not an onion person - I guess I figured that everyone would think I'm a little crazy, but like you, I can handle them when they are cooked (and chopped really small). Raw: no way!

    Yum, carmelized onions. I'm with you on the raw onions, although even with that, as long as they're super finely chopped up, I don't mind them like I used to. :) Am seriously envious of your camera skills!

    The lemon Chobani can be found at the Lowe's Grocery store on Glenwood Avenue behind Carmax (not far from the airport!). They also have the kids flavors!
