Healthy Road Trip! En route to Athens, GA

Hello from the road on the way to Athens, GA for the weekend! My grad school girlfriends and I are all headed down to visit our friend and former classmate Lauren (far right in the photo below) who moved down to Athens to take a job in sports nutrition at University of Georgia last fall. She’s going to finish out her Masters in Nutrition down there; we miss her dearly and can’t wait to see her new home. 🙂

Stephanie (far left) sadly can’t make it down but the rest of all of are ready to invade Athens with full force.

I got up and hit the gym this morning for some elliptical and weights since I knew I would be sitting in the car for a lot of the day — it’s about a 5.5 hour drive. I had a piece of toast with almond butter and jelly pre-gym, and post-gym, I enjoyed a real breakfast.

This was cottage cheese, plain Greek yogurt, sliced banana, fresh blueberries, and a little cinnamon, granola, and raw oats. Yum!

I also quickly threw together a healthy lunch and some snacks for the road! Being the good little future dietitians that we are, all of us packed lunch and snacks for the drive. 🙂

I made a sandwich with roasted herb turkey, sliced tomato, avocado, spinach, and mustard. On toasted whole wheat bread so it doesn’t get soggy. 🙂

And an assortment of miscellaneous weekend/car snackage — apples, oranges, a banana:

Some dry roasted edamame (love this stuff — so crunchy!):

A couple packets of Plum Amazins, which I was sent to review awhile ago — they are chopped up dried plums. Very tasty! I  love the super chewy texture, and apparently compared to the same size serving of raisins or dried cranberries, Plum Amazins have 50% more fiber, 45% less sugar, 19% fewer calories and a lower glycemic index. Sounds good to me!

Time to socialize with the girls and enjoy the road trip! I’m super excited to see Athens — I hear it’s a really cool city and we have some fun plans lined up, including going to see the apparently amazing University of Georgia women’s gymnastics team tonight, doing a 9 mile training run tomorrow, and lots of fun meals out!

    Athens is so fun!! I live in middle GA and love visiting my friends who live in Athens. I'm sure you probably have all your meals figured out, but The Grit is a really awesome vegetarian restaurant that I'm sure you would love. They have a fantastic cookbook too. Have a great trip!

    I just moved to South Florida from close to the Athens area. It is such a fun city. A great girls night out tapas bar to go to is Speakeasy. I took my fiance there one night and he was the only guy in the whole restaurant full of large groups of girls. :) Ops!

    Have fun in Athens - I lived there for 2 years while in grad school and miss it so much! If you get a chance, go to the Grit - my favorite restaurant - it is vegan/vegetarian!

    I think it's SUCH a great idea to pack food for eating in the car on road trips! First, it's way cheaper than stopping to buy something. And second (and even more importantly) so much healthier than most places you could find to stop! Probably tastes better too :-)

    I grew up near Athens and it is a great town. Hope you guys have fun!! If you are in the mood for a burger at all, you should try The Grill. They are open 24/7 and their burgers are AMAZING!! If you go, get some of their feta dressing for their delicious fries. If you are in the mood for some comfort food, that would be the place to go. :)

    Bundle up tomorrow-it's cold and windy here!! The Last Resort is hands down one of the best restaurants here- check it out! You all will absolutely love it here, it's a lot like Chapel Hill, but better (hehe of course I'm a little bias) :) Try to make it over to Five Points too, a great laid back atmosphere. Maybe I'll spot you and say hello like a crazy random person :)

    I got to UGA and wish you a fun weekend! The GymDawgs meet should be lots of fun and when you head downtown for drinks and food, Last Resort is the best dinner in Athens (you will have to wait though), Square One is a great place for fish, Pauley's is a crepe bar that has both sweet and savory crepes in addition to hundreds of beers! In Five Points, you will absolutely love Earthfare. Its a mini version of whole foods, with a daily hot bar, lots of nuts and mixes, and a beautiful display of all their fruits and veggies. Have a great weekend and enjoy your chilly long run!

    I just found your blog and I'm a fan! I do have to ask, if you toast your bread does it actually keep your sandwich from getting soggy? I want to bring sandwiches for lunches and such but I haaaaate soggy bread. It's seriously one of the worst textures ever.

      Welcome! :) It really does keep the bread from getting soggy - just make sure it's super toasted! I hate soggy bread too.
