Hi from the beach! We’re in the Outer Banks this week with Matt’s family and the livin’ is easy. I love it here. 🙂

Playing in the waves all day is my favorite – I can stay out in the water forever! Relaxing on the beach is nice too though. 🙂

Sidenote – Matt gave me a S’well stainless steel water bottle for Christmas and it’s the greatest thing ever – perfect for the beach because it keeps my water cold ALL DAY!

We’ve been having some good homemade eats so far here, too! Saturday night’s dinner was a simple fish, salad and corn – yum.

Sunday night Matt’s dad made us all homemade BBQ! Plus slaw, baked beans, and more corn!

Last night Matt and I were in charge of dinner for our crew – we made a delicious salmon with watermelon salsa and quinoa!

It was a big hit – I’m sharing the recipe tomorrow so stay tuned. 🙂

As for workouts, Matt, our friend Thomas, and I got in a short run one morning. It was hot out but felt good to move! I felt way better than I did on my weekend 10 miler, so that was good. 🙂 We covered 3.5 miles and stopped for some mini boot camps along the way.

Back to relaxing! See you back here tomorrow for the salmon with watermelon salsa recipe – it’s a keeper! 🙂

I love the Outerbanks so much. We've done several big family vacations there, and it's such a great place to both relax and get in some fun adventures. Enjoy! :)

Ok, so the S’well stainless steel water bottle are definitely worth it, hey? I've been eying them for some time now and am thinking about taking the plunge and purchasing one... Also, I don't even like fish but that salmon with watermelon salsa and quinoa looks unreal! I'm looking forward to the recipe!

I've always wondered about those Swell water bottles! If they really do keep drinks cold. All the food you've eaten sounds fantastic!
