Quick & Easy Dinner: Cold Tuna & Veggie Pasta Salad

Good morning!

I had a great rest of the day yesterday — did my errands at Target (and purchased two cute summer dresses as you saw if you’re following me on Twitter, heh) and then went and saw “Water for Elephants” finally with some friends! I loved the movie… I thought it was really well done. Did you see it? What’d you think?

In between errands and the movies, I made a quick dinner at home.

Looks gross (tuna can just never look cute, can it?), but is delicious 🙂

I mixed it all up before I ate it — the sauce in the tuna turned into the pasta sauce, too 🙂

This recipe is an old favorite — click here for the recipe. I didn’t have peas so I used green peppers instead, and I added a laughing cow cheese into the tuna mixture, too, with a little less yogurt. Yum!

I’m off to class — we’re going from 9 to 3 today, but when I’m done I’m heading out to go climbing at a gym with my friends Tim and Lindsey! I’ll be back with a full report… this should be interesting 😉

    I loved the book so I am not sure if I want to see the movie. What did yeveryone think of the movie and did anyone read the book?

      I loved the book too and the movie was great. Usually I'm not a huge fan of movies done after my favorite books, but this one was good! Although I did read the book a REALLY long time ago.

    I just can't get over Robert Pattinson as Jacob. the image I had of him when reading the book just doesn't fit with Pattinson. I think he'll forever be "twilight boy" to me.

      I actually really liked him as Jacob - surprisingly, since I heart Twilight. He was so different in it! But I also read the book so long ago I don't remember who I was thinking of when I read about Jacob originally... if I'd read it more recently that might have been different :)

    Your salad looks delish. I only eat the white albacore for some reason. I have not seen the movie but one day next week maybe I will sneak out of the house and take myself to a matinée.
