Recent Eats

Hey friends! There’s been a lot of fitness talk over here lately and not a whole lot of food. Let’s discuss some recent eats of note, shall we?

One night last week Matt and I threw together a really easy stir fry for dinner – peppers, asparagus, and frozen string beans with some grass fed beef. We used Tessesmae’s Soy Ginger dressing as the sauce and threw it on at the last minute. Served atop brown rice!

I love stir fry – so easy and tasty. Great way to use up random veggies in the fridge! We made enough that I had leftovers for two packed lunches, too – I added some chickpeas to the mix since the beef was almost gone so that bulked it up a little bit.

If you’re a big stir fry/Asian food fan, here is a recipe to try from the archives –> Easy Coconut Curry. It’s made with chicken but can easily be swapped for tofu, steak, or beans!

We’ve also been enjoying some good Blue Apron eats, as usual. One of our faves last week was this awesome steak and eggs with quick kimchi fried rice.

Yum, I want to eat this again right now! What is it about a fried egg that makes every meal more awesome?

This Blue Apron spiced cod with beets, carrots, and arugula was really tasty too – a lot of my fave ingredients in there!

And while we’re speaking of fish, my new favorite recipe is this Baked Salmon with Mustard Dill Sauce. My mom has been talking this recipe up for awhile so when we made plans to have dinner at my parents house on Sunday night I asked if she’d make it. It was as good as she said! She follows the reception except that instead of using fat free sour cream in the sauce she uses full fat plain Greek yogurt. 🙂 I approve!

I took home the leftover piece of salmon and enjoyed it for lunch yesterday while working from home. Just as good day two!

And speaking of lunches, I’ll be sharing a delicious new kale caesar salad recipe tomorrow – I’ve been testing out a homemade vegan caesar salad dressing and this one is a big winner. I ate it a couple times last week!

Last but not least in this hodge podge of recent eats is a variation on my Tart Cherry Pie Snack Balls! I used half dried tart cherries and half raisins, and also added some extra nuts – about a half cup of pecans and a few pistachios! Basically whatever was floating around in the pantry. 🙂 My college BFF Turner and I enjoyed snacking on these over the weekend, and I’ll be eating the rest this week!

Have a great day, everyone! I’m still flying high over here after a great weekend with friends and setting a new PR at the Cherry Blossom 10 Miler. 🙂 I did a little digging on their website and discovered they have these cool individual stats graphics… top 4% of women, nice!

On the agenda for fitness today: lunchtime yoga! Yesterday was a rest day. 🙂 My legs actually feel pretty good (especially compared to how insanely sore they were after the Rock ‘n’ Roll DC Half Marathon a few weeks ago – must have been all those hills), but my calves are still sore/tight so I decided not to go to the track this morning. Yoga will feel good. 🙂

What’s the most delicious thing you’ve eaten lately? Or – what are you having for lunch today? Any awesome packed lunches planned? I didn’t get it together to make a packed lunch today so I’ll be treating myself to something on my way back to the office from yoga!

    Oh my gosh the steak/fried egg/kimchi rice combo sounds AMAZING! I love all of those things. We were in Cabo last week and ate some pretty amazing ceviche, fresh fish, etc. I miss it already.

    Everything looks so yummy! I had made a big batch of spicy sweet potato and black bean chicken chili a few weeks ago so I've been eating that for lunch this week, so good! So proud of you for getting your new PR!!

    I've been really into a big salad (lettuce/kale, cucumbers, tomatoes, etc) with a Tuna Creations packets on top. Really into the Herb and Garlic version right now. Veggies and protein Win!

    I've been really into topping my salads with fried eggs lately! I agree- so satisfying! I love to do salad greens and veggies with the fried eggs, then simply drizzle olive oil, salt, pepper and herbs in lieu of bottled dressing, and serve with a slice of whole wheat toast. My fave!

    I love stir fry. It is such a great "go to" meal and anything goes. Great idea to add the chickpeas.
